i learnt this simple and quick potato fry recipe from my mom. she prepares aloo fry whenever she’s feeling lazy to prepare any sabzi or curry as side dish for tomato rasam rice or sambar rice. after i got married even i am continuing her legacy. while she was typically preparing this recipe as side dish for rice with dal and rasam. however i have extended it and i even serve it for snacks with hot and sweet tomato ketchup.

furthermore, some important tips for a perfect crispy potato fry recipe. firstly, do not dice the potatoes to small cube. it should be minimum of 1 cm in height and width. secondly, do not forget to peel the skin of potatoes before stir frying. lastly, add salt and chilli powder when you have completely fried and about to serve. if you add it in between, salt will release moisture and turns aloo fry soggy and soft.

Ingredients
  • 2 medium sized potatoes
  • 4 tbsp oil
  • ½ tsp kashmiri chilli powder / lal mirch powder
  • salt to taste
Instructions ( 1 cup =255 ml)
  1. firstly, peel the potatoes and cut into cubes.
  2. soak the chopped potato pieces in cold water for 5 minutes to get rid of extra starch.
  3. further, heat a non stick pan or a thick bottomed pan with 4-5 tbsp of oil
  4. once the oil turns hot, add in the chopped - soaked potato cubes into it.
  5. stir and spread the potatoes gently making sure to coat it with oil.
  6. fry for 2-3 minutes on medium flame without disturbing.
  7. further, stir occasionally for even cooking of potatoes.
  8. make sure to fry on medium flame else potatoes will not cook from inside and turn crispy.
  9. also note not to over mix as they turn to be soft and sticky.
  10. fry the potatoes till it turns golden brown in colour from all the sides.
  11. switch off the flame and sprinkle chilli powder.
  12. also sprinkle salt to taste.
  13. mix immediately making sure to coat evenly.
  14. finally serve aloo fry or potato fry with hot steamed rice or rasam.

  • firstly, soak the potatoes in cold water to remove extra starch and make potato fry more crispy.
  • additionally, the crunchiness of potatoes depends on quality of potatoes you are using.
  • however, over stiring makes potatoes soft and not crunchy.
  • finally, aloo fry or potato fry turns soft after adding salt. so make sure to sprinkle salt just before serving.
