aloo paratha recipe | aloo ka paratha recipe | alu paratha recipe with detailed photo and video recipe. a popular indian flat bread recipe which is stuffed with boiled mashed potatoes with other indian grounded spices. it is typically served for lunch, breakfast and even for dinner with simple yogurt, pickle and perhaps with curry recipes.
alu parathaaloo paratha recipe | aloo ka paratha recipe | alu paratha recipe with step by step photo and video recipe. basically a potato stuffed paratha recipe from north indian and punjabi cuisine. it is prepared from wheat dough which is filled with spiced, mashed potatoes and then roasted with desi ghee or oil. while the aloo paratha is almost like a staple food for north indians, south indians has also developed a great taste for alu paratha recipe.

i prepare alu ka paratha almost every week. unlike others who typically prepare aloo ka paratha for breakfast, i prepare it for my dinner.  i prefer to have roti or paratha’s for my dinner and i usually avoid rice. perhaps i prepare more paratha’s compared to roti’s, as it does not require additional curry to be prepared. and we simply enjoy this paratha with big scoop of thick yogurt and mango pickle. i even add other boiled vegetables like gobi, peas and i try to mix and match to extend it further.

furthermore, some important tips for for a perfect aloo paratha recipe. for any paratha recipe, the dough has to be a smooth dough. you can use warm water or milk to knead a smooth dough. secondly, the potatoes has to be mashed evenly and smoothly. if the mashed potato has any lumps, than the rolling would be a problem. lastly, apply oil only after roasting the paratha’s for 40-50 seconds both side. otherwise, the parathas will taste raw.

Ingredients
for aloo stuffing:
  • 2 large sized potato, boiled and peeled
  • 1 tsp ginger, grated
  • ¾ tsp kashmiri chili powder / lal mirch powder
  • ½ tsp coriander powder / dhaniya powder
  • salt to taste
  • ¼ tsp garam masala
  • 2 tbsp coriander leaves, finely chopped
  • ½ tsp aamchur powder / dry mango powder
  • ¼ tsp ajwain seeds / caraway seeds
for chapathi / paratha dough:
  • 1 cup whole wheat flour / atta
  • salt to taste
  • 1 tsp oil or ghee
  • water as required for kneading
  • ¼ cup wheat flour for dusting
for roasting paratha:
  • ghee or oil as required
Instructions ( 1 cup =255 ml)
for aloo stuffing:
  1. firstly, in a small mixing bowl mash boiled potatoes well.
  2. further add rest of the ingredients mentioned in ingredients list and mix well.
chapathi / paratha dough recipe:
  1. firstly, in a large mixing bowl, take wheat flour add salt.
  2. add water and knead the dough for 5 minutes.
  3. furthermore, grease the dough with a tsp of oil and rest for atleast 20 minutes.
assembling and rolling aloo paratha recipe:
  1. firstly, pinch a medium sized ball dough, roll about 5 inches in diameter.
  2. place the prepared stuffing in the center.
  3. take the edge and start pleating bringing to center.
  4. and press the pleats from center.
  5. furthermore, sprinkle some flour and roll to of a chapati size.
roasting aloo parata recipe:
  1. firstly, on a hot tava place the rolled paratha and cook both sides.
  2. also add oil / ghee and press slightly.
  3. finally, serve hot aloo parathas with sauce, raita or pickle.


how to make aloo paratha step by step photo recipe:

for aloo stuffing:

  1. firstly, in a small mixing bowl mash boiled and peeled potatoes well.

  2. further add ginger, chili powder, coriander powder, garam masala, aamchur powder, ajwain seeds and salt.

  3. also add finely chopped coriander leaves.

  4. mix well with your hand making sure spices gets combined well.

chapathi / paratha dough recipe:

  1. firstly, in a large mixing bowl, take 1 cup of wheat flour.

  2. also add required salt. you can also add a tsp of oil to make dough more soft.

  3. now add water in batches and knead the dough.  use luke warm water to make soft dough.

  4. add more water if required and knead for 5 minutes.

  5. knead till the dough is non sticky, soft and smooth.

  6. furthermore, grease the dough with a tsp of oil to prevent from drying.

  7. finally, cover with moist cloth and rest for atleast 20 minutes.

assembling and rolling aloo paratha recipe:

  1. firstly, pinch a medium sized ball dough, roll and flatten it.
  2. also dust with some wheat flour.

  3. further roll it in a circle of about 5 to 5.5 inches in diameter.

  4. place the prepared ball of aloo stuffing in the center.

  5. take the edge and start pleating bringing to center.

  6. also join the pleats together and pinch off the extra part.

  7. further slightly press and flatten with your hand.

  8. furthermore, sprinkle some flour and roll to of a chapati size.

roasting aloo parata recipe:

  1. firstly, on a hot tawa place the rolled paratha and cook for a minute.

  2. furthermore, when the base is partly cooked, flip the paratha.

  3. also brush oil / ghee and press slightly. flip again once or twice till both the sides are cooked properly.

  4. finally, serve hot punjabi aloo parathas with sauce, raita or pickle.

notes:

  • firstly, adjust or vary the spices according to your preferences.
  • furthermore, for more rich flavour and taste, use generous amount of ghee while roasting.
  • also add finely chopped green chili to make paratha more spicy.
  • finally, punjabi aloo paratha taste great when served hot.

    What kind of flour did you use? I used whole wheat flour and mine didnt come out as nice. They were a little raw from inside and crunchy from outside.
