cabbage poriyal | cabbage thoran | cabbage palya | cabbage stir fry with detailed photo and video recipe. easy and tasty cabbage stir fry recipe or also known as kosu palya or kosina palya, is typically eaten as side dish to rasam rice or sambar rice combination. alternatively, it can also be eaten and served with chapathi or roti as sabzi too.

this is one such recipe which i prepare frequently and almost weekly for my daily lunch and dinner. yet it took so many days to post a simple cabbage poriyal recipe on my blog. i was getting a several request for this recipe but i was always busy with other fancy recipes. moreover it only takes few minutes to prepare this recipe with very less ingredients. this is my husband’s favourite recipe and he enjoys both with rice and chapathi. certainly this is handy recipe for those days when you are in no mood to prepare a fancy curry yet you crave for tasty one.

furthermore, i would like to highlight some tips and variation to cabbage thoran recipe. firstly, do not grate the cabbage very fine as it may get dissolve in curry to form a paste. ideally it should have size of thin flat noodles and you should feel the crunchy taste. secondly, i have added ground coconut masala to this cabbage stir fry, but if you do not prefer it you can easily skip it. alternatively you can add 1-2 tsp of rasam powder or sambar powder to get a good flavour. lastly, do not add too much water while cooking as we require a stir fry and not a gravy.

Ingredients
  • 3 tsp oil
  • 1 tsp mustard seeds
  • ¾ tsp urad dal
  • ¾ tsp chana dal
  • few curry leaves
  • pinch of hing / asafoetida
  • 2 cup cabbage, finely chopped
  • ¾ tsp turmeric / haldi
  • 1 tsp jaggery / gud / bella
  • salt to taste
  • ¼ cup water
for masala:
  • 3 tbsp coconut, fresh
  • 2 dried kashmiri red chilli
  • ¾ tsp cumin / jeera
Instructions ( 1 cup =255 ml)
  1. firstly, in a large kadai heat oil.
  2. further add 1 tsp mustard seeds, ¾ tsp urad dal, ¾ tsp chana dal, few curry leaves and pinch of hing.
  3. allow to splutter.
  4. now add 2 cups of finely chopped cabbage and saute for a minute.
  5. furthermore, add ¾ tsp turmeric, 1 tsp jaggery and salt to taste.
  6. additionally, add ¼ cup of water and mix well.
  7. cover and cook for 5 minutes.
  8. now prepare the masala by blending 3 tbsp coconut, 2 dried kashmiri red chilli and ¾ tsp cumin.
  9. blend to coarse paste without adding any water.
  10. add the masala paste to cabbage stir fry and give a good mix.
  11. simmer for 2 minutes so that cabbage absorbs flavours.
  12. finally, serve cabbage poriyal along with hot steamed rice or chapathi.

notes:

  • firstly, chop the cabbage finely so that it cooks faster.
  • also add rasam powder or sambar powder for more flavours.
  • additionally, add in chopped capsicum for variation.
  • finally, cabbage poriyal taste great when prepared slightly crunchy.
