coconut milk rasam recipe | kayi halu rasam | thengai paal rasam with step by step photo and video recipe. basically, rasam or rasa means flavored liquid or soup prepared with tamarind juice as its base. primarily, rasam recipes are served or consumed with hot steamed rice. however, these days, it is also consumed as soup for common cold and indigestion. furthermore, rasam recipes are even served as cold rasam similar to cold coffee or iced tea. finally, there are several variety of rasam prepared, but today we will discuss about coconut milk rasam.

firstly, i have to admit that my first encounter with coconut rasam wasn’t that great. i still remember, my mom had prepared kayi halu rasam for the first time. perhaps, she got this recipe from one of her office colleagues. she prepared it very sweet and creamy by adding more coconut milk. it wasn’t a pleasant taste and basically we had to dump the entire rasam. on that day, we both learnt that, coconut milk rasam has to be spicy rasam. more importantly, we got the measurement of coconut milk to be added to the rasam.

in addition to the taste the of coconut milk, it has to offer several health benefits too. coconut milk has good fatty acids which helps in maintaining the body weight. recent research shows, consuming less fat can make you more fat. coconut milk is one particular solution, which maintains the good cholesterol and eventually the body weight. in addition, it also helps to have a healthy skin and hair and slows down the ageing process. perhaps that might be the reason, south indians apply coconut oil to hair, especially during summer season. another advantage of coconut milk is it improves immunity and improves heart health.

Ingredients
  

for tempering:

  • 2 tsp coconut oil / cooking oil
  • ¼ tsp methi / fenugreek seeds
  • 1 dried red chilli
  • ½ tsp mustard seeds / rai
  • ½ tsp urad dal
  • 5-7 curry leaves
  • pinch of hing / asafoetida

other ingredients:

  • 2 tsp cumin seeds / jeera, crushed
  • 3 garlic cloves, crushed
  • 2 green chilli, slit lengthwise
  • ½ to mato, finely chopped
  • ¼ cup tamarind extract
  • ¼ tsp turmeric powder
  • salt to taste
  • 2 cups water, add to adjust consistency
  • 1 tsp pepper, crushed
  • 1 cup coconut milk
  • few coriander leaves, finely chopped

Instructions
 

  • firstly, in a large kadai add coconut oil or any oil of your choice.
  • furthermore, add all the tempering ingredients like methi, mustard, urad dal, red chilli, curry leaves and hing. saute till they splutter.
  • after that, add crushed cumin seeds, crushed garlic cloves and green chilli.
  • saute till garlic turns slightly golden brown.
  • furthermore, add chopped tomatoes and tamarind extract.
  • also add in turmeric powder and salt to taste.
  • give a good mix and boil for atleast 15 minutes on medium flame.
  • after that, add 2 cups of water to adjust the consistency and quantity. get to a boil.
  • then add crushed black pepper.
  • additionally, add a cup of coconut milk and give a good stir.
  • simmer for 2 minutes and turn off the flame. do not boil too much as coconut milk may curdle.
  • finally, garnish with fresh coriander leaves and serve with rice.

notes:

  • firstly, boil the tamarind extract and tomatoes well. else the rasam will not taste good.
  • coconut milk is prepared by grinding 1 cup of fresh coconut with some water. furthermore, squeeze and extract the juice from it which results in coconut milk.
  • furthermore, using coconut oil makes rasam more flavourful.
  • additionally, you can also use mint leaves for more flavours.
  • finally, do not boil too much once you add coconut milk as they may curdle.
