i learnt this yummy rice recipe from my mom. she use to prepare coriander pulav for my lunch box when during my college days. back then i was not keen about the recipe, but use to demand for my lunch box. however, just before getting married i made sure to learn this recipe to feed my myself and my husband. today i prepare this pulao for breakfast as well as for lunch and dinner.

coriander rice makes a balanced diet with several health benefits. coriander leaves are rich in dietary fiber, manganese, iron, vitamins and magnesium. plus the coriander pulao is prepared with vegetables like beans, capsicum, peas which makes this even more nutritious. moreover, the other advantage of this recipe is that it could be prepared with the left over rice too. isn’t it this recipe handy?

Ingredients
  • 2 cup cooked rice
  • 2 tbsp oil / ghee
  • 1 tbsp ginger-garlic paste
  • 1 carrot, chopped
  • ½ onion, thinly sliced
  • 7 beans, chopped
  • 1 capsicum, chopped
  • ½ cup peas
for masala paste:
  • 1 cup coriander leaves
  • 2 green chilli
  • ½ onion, thinly sliced
  • 4 cloves/lavang
  • 4 to 5 black peppers/sabut kali mirch
  • ½ inch cinnamon/dal chini
  • 2 tbsp water
Instructions ( 1 cup =255 ml)
masala paste recipe:
  1. prepare the masala ingredients like coriander leaves, onion, green chilies, black pepper, cinnamon and cloves with 2 tablespoons of water.
  2. make smooth paste out of it in the blender and keep it aside.
coriander rice recipe:
  1. chop the veggies of your choice like carrot, capsicum, onion and keep them ready.
  2. heat the oil / ghee in a pan on medium heat. add sliced onion and saute it for 2 minutes.
  3. add ginger garlic paste and sauté till the raw smell of ginger and garlic goes away. then add chopped veggies and cook for couple of minutes.
  4. now add green peas and fry for a minute.
  5. add prepared masala paste.
  6. also add salt to the same mixture.
  7. now add leftover cooked rice and mix well.
  8. mix them roughly.
  9. coriander pulao is ready. serve it with raita.

notes:

  • optionally, add mint leaves with coriander leaves to enhance the flavour and taste.
  • cook the vegetables properly before adding the rice.
  • rice should be of room temperature without moist. if you are adding freshly cooked rice, make sure you dry them by spreading them in plate.
