drumstick sambar recipe | nuggekai sambar recipe | mulakkada sambar with step by step photo and video recipe. drumstick sambar is most popular south indian sambar recipe. drumstick sambar is usually served with hot steamed rice. in most of the south indian restaurants, this sambar is served with steamed idli and dosa.

sambar also pronounced as sambhar and is a basic lentil soup from indian cuisine. sambar is commonly eaten with rice or idlidosa. there are many variations in making sambar and rasam powder. i have already shared udupi style sambar powder and udupi style rasam powder. adding sambar powder while preparing south indian sambar, makes your sambar more flavourful.

drumstick sambar

nuggekai sambars flavour is enhanced with onions and drumsticks. the aroma of drumstick sambar / pulusu is due to addition of udupi sambar powder. the taste and flavours are great which makes you chew and suck the drumsticks till the end. this is no-coconut version sambar. they are also popullary called as murungakkai sambar in tamil.

Ingredients
  • 1 cup toor dal, cooked
  • 20 pieces of drumsticks, finger length
  • 1 onions, quartered
  • 1 green chilli (optional)
  • ¼ tsp turmeric
  • ½ cup tamarind juice
  • 1 tsp jaggery
  • 2 tsp sambar powder
  • few curry leaves
  • few coriander leaves, chopped
Instructions ( 1 cup =255 ml)
  1. in a large vessel add chopped drumstick and onions. also add a cup of water and cook till drumsticks are half cooked. (approx 10 min)
  2. now add tamarind extract and cook further for 5 minutes. cook till drumsticks are fully cooked.
  3. also add turmeric, jaggery and salt.
  4. now add curry leaves
  5. also add smashed dal and mix well. bring it to a boil.
  6. add 2-3 tsp of sambar powder and get to a boil. (approx 5 min)
  7. finally add coriander leaves and serve.
  8. serve with rice and ghee.

notes:

  • give tempering with ghee / coconut oil to add extra flavour. ( add mustard, cumin and methi, red chilli and curry leaves)
  • do not overcook drumstick. it will break in shape.
  • chew the drumstick to get the real taste of sambar.
