to be honest, i am not a huge fan of mayo recipes. i feel these are loaded with too much fat and grease in it and one of the unhealthy condiments out there in the market. however, there is a huge demand for this recipe and i personally got many requests from my readers to post different types and flavours of mayo recipe. in this recipe, i have shown 3 extra flavours made with classic eggless white. the first one is the most popular variant, i.e garlic mayo, also popularly known as aioli sauce. the second one is the indian adaption of mayo recipe. it is loaded with dry spice powder, known as tandoori mayonnaise. the last variant is the green coloured refreshing variant. i call this as mixed herbs mayo, but you can also call as green chutney mayo recipe.

furthermore, i would like to add some more tips, suggestions and variants to eggless mayonnaise recipe. even though it takes hardly 3-4 minutes to prepare this recipe. yet you need to take extra care with its ingredients. firstly, the milk has to be chilled and preferably refrigerate the mixer jar too. any slight increase in the temperature may curdle the milk and may not get the desired texture. secondly, the mixer should use blend blade and mode. also, note that i have pulsed it for roughly 10 seconds, and not run continuously. lastly, if your milk curdles, do not panic. add 1 tbsp of milk and try again. add more if it does not thicken.

Ingredients
  

for eggless mayonnaise:

  • ½ cup milk, chilled
  • ¾ cup oil
  • ½ tsp mustard powder
  • ¼ tsp pepper powder
  • ½ tsp sugar
  • ½ tsp salt
  • 1 tbsp vinegar

for chilli garlic mayo:

  • 2 tbsp chilli sauce
  • 1 tsp garlic, finely chopped
  • ½ tsp chilli flakes

for mixed herbs mayo:

  • 3 tbsp coriander
  • 3 tbsp mint
  • 1 inch ginger
  • 1 chilli

for tandoori mayo:

  • 1 tsp chilli powder
  • ¼ tsp turmeric
  • ¼ tsp coriander powder
  • ¼ tsp cumin powder
  • ¼ tsp garam masala
  • ¼ tsp kasuri methi
  • ¼ tsp ginger garlic paste

Instructions
 

eggless mayo preparation:

  • in a small mixi, take ½ cup milk, ½ cup oil, ½ tsp mustard powder, ¼ tsp pepper powder, ½ tsp sugar and ½ tsp salt.
  • pulse and blend 10 times.
  • now the mixture has thicken.
  • slowly add 2 tbsp oil, 1 tbsp vinegar.
  • close and pulse 10 more times.
  • now the mixture has thickened even further.
  • further, add 2 more tbsp oil and pulse for 5 times.
  • the mixture will turn very thick and creamy.
  • finally, eggless mayonnaise is ready to enjoy.

mixed herbs mayo preparation:

  • in a blender take, 3 tbsp coriander, 3 tbsp mint, 1 inch ginger and 1 chilli.
  • blend to smooth paste adding water as required.
  • mix 2 tbsp of prepared green paste with 3 tbsp prepared eggless mayonnaise.
  • finally, mixed herbs mayonnaise is ready to serve.

chilli garlic mayo preparation:

  • firstly, take 3 tbsp prepared eggless mayonnaise and add 2 tbsp chilli sauce.
  • also add 1 tsp garlic and ½ tsp chilli flakes. mix well.
  • finally, chilli garlic mayonnaise is ready to serve.

tandoori mayo preparation:

  • firstly, take 3 tbsp prepared eggless mayonnaise and add 2 tbsp chilli sauce.
  • add 1 tsp chilli powder, ¼ tsp turmeric, ¼ tsp coriander powder and ¼ tsp cumin powder.
  • also add ¼ tsp garam masala, ¼ tsp kasuri methi and ¼ tsp ginger garlic paste.
  • mix well making sure everything is well combined.
