this recipe is something i learned from my father and he still prepares this quite frequently. he prepares this banana wafers with nendra balehannu or also known as plantain banana. according to him, the banana chips has to be prepared from this banana variety or otherwise you would not be able to get the taste and color. i have used a normal green raw banana but i would recommend to use the nendra or nenthra pazham banana for a authentic taste.

while there isn’t any complicated steps for the kerala banana chips recipe, yet few tips for a perfect one. firstly, i heavily recommend to use green raw banana for the authentic and traditional taste. secondly, i also recommend to deep fry the chips in coconut oil for better taste and crisp. in addition, sunflower oil too can be used for deep frying. lastly, after frying the first batch, the subsequent batches would require less salt water and pour it accordingly.

Ingredients
  • 2 raw banana, nendrankai / raw nendran plantain
  • ¼ cup water
  • oil for deep frying, coconut oil / cooking oil
  • ½ tsp salt
  • ½ tsp turmeric / haldi
Instructions ( 1 cup =255 ml)
  1. firstly, take raw banana and cut the ends.
  2. also slit the skin without touching the banana.
  3. further, peel of the skin with your hand.
  4. heat the coconut oil and reduce the flame to medium.
  5. slice the peeled raw banana directly into oil.
  6. stir for a minute on medium flame.
  7. and now, take a small cup with water.
  8. add in salt and turmeric, mix well.
  9. further, spread and pour 2 tsp of salt-turmeric water into oil.
  10. be careful as oil might splutter little.
  11. stir occasionally, till the chips gets cooked well.
  12. also cook till the chips turn crisp but do not turn to golden brown.
  13. now drain off over kitchen towel to remove excess oil.
  14. also allow to cool completely before transferring to airtight container.
  15. finally, crispy and tasty banana chips are ready to serve along with tea.

notes:

  • firstly, use nendrankai / raw nendran plantain for authentic kerala style banana chips.
  • also fry in coconut oil for more flavour.
  • alternatively, bake at 200 degree fahrenheit or 93 degree celsius for 3 hours or till they turn crisp.
  • additionally, sprinkle chilli powder at the end to prepare spicy, masala banana chips.
  • finally, banana chips stays good for atleast 2 weeks when stored in airtight container.

  1. Raw bananas are not very tasty…How do you get that sweet banana taste out of a banana chips…Maybe use ripe plantains which are harder then ripe bananas? I love the idea of this if these taste like sweet banana chips snacks where you find banana chips.
