idiyappam recipe | nool puttu | kerala style idiyappam with rice flour with detailed photo and video recipe. a healthy rice based breakfast recipe which is basically cooked with help of steam. it is also known as string hoppers and is traditional malayalam or tamil delicacy which is even popular in srilanka. it is typically served with coconut based curry or vegetable stew.
nool puttuidiyappam recipe | nool puttu | kerala style idiyappam with rice flour with step by step photos and video recipe. the word idiyappam is derived from mlayalam /tamil language which means steamed broken down pan cake or noodles. it is also known as shavige or noolu semige in kannada but the preparation slightly varies from this recipe. moreover this culinary staple food is typically eaten with chicken curries, fish curries or coconut cream based vegetable stew.

i have already shared the the other variation of string hoppers from traditional kannada cuisine i.e akki shavige recipe. it has the same texture and taste but has slight variation and subtle difference while preparing. in other words, the shavige recipe is prepared by grounding the soaked rice and then steaming the dough before pressing it noodles. whereas, the instant idiyappam recipe is prepared from rice flour and then it is pressed to noodles and then later it is steamed. in addition, coconut cream is added to akki shavige dough, whereas generally in nool puttu there would not be any trace of coconut.

furthermore, some important tips and techniques while preparing the idiyappam recipe. firstly, i always recommend to use a fine rice flour for this recipe. you may find different types of rice flour in stores, but fine rice flour works ideally to this recipe. in addition, i would heavily recommend to roast the rice flour before mixing it with hot water. roasting until, sandy texture should be more than enough and make sure it does not change its color. lastly, you can easily prepare lemon idiyappam or masala idiyappam with the left overs by adding lemon seasoning and other chopped vegetables.

Ingredients
  • 1 cup rice flour / akki hittu
  • 1¼ cup water
  • salt to taste
  • 1 tsp oil
Instructions ( 1 cup =255 ml)
  1. firstly, in a kadai take 1¼ cup of water.
  2. also add salt and oil.
  3. stir well and get water to boil
  4. further simmer the flame, and add roasted rice flour.
  5. mix continuously till the dough is formed.
  6. now turn off the flame, cover and rest for 5 minutes.
  7. furthermore, with wet hands, knead and combine together.
  8. be careful, as the dough is going to be very hot.
  9. now take noodle mould and fix to the chakli maker.
  10. grease the chakli maker with some oil. this prevents dough from sticking to mould.
  11. now make a cylindrical shape out of dough and place the dough inside maker. keep covered the rest dough else they will turn hard.
  12. tighten the lid and start preparing idiyappam.
  13. on the greased idli plate press in circular motion.
  14. further, steam it for 10 minutes.
  15. finally, serve idiyappam with tomato kurma or sweet coconut milk and topped with coconut oil.

  1. firstly, dry roast rice flour for 2 minutes on low flame. keep aside and allow to cool completely.

notes:

  • firstly, maintain the proportion of rice flour and water, else idiyappam is not going to be good.
  • also replace water with coconut milk for more flavours.
  • additionally, prepare the dough on low flame else the idiyappam will be hard.
  • finally, serve iddiyappam as it is or prepare lemon sevai from it.

    • the store bought one are typically with preservatives. moreover i prefer steam based breakfast recipes to be freshly cooked rather than frozen one. I would recommend you the same
