sooji halwakesari bhath recipe | rava kesari recipe | sooji ka halwa recipe | sheera recipe with step by step photo and video recipe. in karnataka, kesari bhath is one of the favourite breakfast recipes prepared from semolina. it is often served with khara bhath which is a savoury to make a sweet and savoury combination. this combination is known as chow chow bath recipe and is popular in many tiffin centers of bangalore.

kesari bhath is also called as sheera in udupi and mangalore regions. the silky and shining texture and crunchy bites of nuts makes even sooji a delicious sweet. i personally do not like to have sweets for breakfast. therefore, i always prepare rava bath recipe which makes perfect combination of sweet and savoury. previously, i have shared pineapple sheera; so today i thought of sharing a simple sheera recipe.

kesari bhath

there are many ways of preparing sheera. my mil prepares with milk whereas, my mom prepares with water. both taste equally great. you can even prepare with half milk and half water as well. the only trick my mom shared to make perfect sooji ka halwa is always maintain the ratio of rava:water:sugar in 1:2:1 ratio. adding generous amount of ghee and sugar will not only enhances the flavour but also makes sheera more silky and shiny.

Ingredients
  • ½ cup bombay rava / semolina / sooji
  • 1 cup water, boiling water
  • ½ cup sugar
  • 2 tbsp ghee, clarified butter
  • 10 cashews
  • 10 raisins
  • ⅛ tsp lemon yellow food colour / kesar - optional
  • ⅛ tsp cardamom powder / elaichi powder
Instructions ( 1 cup =255 ml)
  1. in a large kadai, take 2 tbsp or more ghee and roast cashews until golden and raisins till they swell. remove in a plate and set aside.
  2. once done, add ½ cup sooji and fry on low flame till they turn aromatic.
  3. now pour 1 cup boiling water slowly and stirring continuously.
  4. keep the flame on low and keep on stirring continuously. make sure there are no lumps forming.
  5. now add half cup of sugar and food colour.
  6. give a good stir till the sugar dissolves and separates from pan.
  7. add cardamom powder and fried dry fruits. mix well.
  8. rava kesari taste great when served hot with khara bhath. it is also good when served warm or cold.

notes:

  • instead of food colour, you can also use kesar or skip completely.
  • adding more ghee makes sheera tasty.
  • always maintain the ratio of rava:water:sugar in 1:2:1 ratio.
  • you can increase the sugar if you like more sweetness.
  • always prepare rava kesari on low flame.
  • do remember to add boiling water.
