lemon rice recipe | chitranna recipe | karnataka nimbehannu chitranna with detailed photo and video recipe. basically a rice or more precisely a leftover rice lemon flavoured recipe for breakfast and lunch box. it is widely prepared in south india, especially in karnataka where it prepared for not just for breakfast, also during religious ceremony meals.
lemon rice recipelemon rice recipe | chitranna recipe | karnataka nimbehannu chitranna with step by step photo and video recipe. it is typically prepared by mixing cooked leftover rice with seasoning known as oggarane. the seasoning mainly includes, mustard, peanuts, curry leaves and more importantly lemon juice. in some version of lemon rice even garlic, carrot and onions are added, but this version is the traditional without it.

i guess its too late for me to post this simple lemon rice in my blog. but i lately realised that i have not posted few of authentic simple karnataka recipes in my blog. i was getting several request to post authentic and traditional recipes from south india and especially from karnataka. hence  i have decided to post 1-2 simple and traditional recipes every week with a video. karnataka nimbehannu chitranna is one of them and i hope i can continue this series in the coming week.

chitranna recipewhile there isn’t much complicated steps in this lemon rice recipe, yet i would like to share some tips and recommendations. firstly, i heavily recommend to use dry and non sticky rice for chitranna recipe. moisture in rice would result in lump formation and also tasteless. secondly, you can also add some grated raw mangoes which would add nice flavour to it. fresh mangoes are ideal, but even frozen mangoes can also be added. lastly, add lemon juice after switching off the flame followed by a rough mix.

Ingredients
  • 3 tsp oil
  • 1 tsp mustard seeds
  • 1 tsp chana dal
  • pinch of hing / asafoetida
  • 1 tsp urad dal
  • few curry leaves
  • 1 dried red chilli
  • 3 tbsp peanuts / groundnut, roasted
  • 10 whole cashews
  • 1 green chilli, finely chopped
  • 1 inch ginger, finely chopped
  • ½ tsp turmeric
  • 2 cups cooked rice
  • salt to taste
  • half lemon
  • 2 tbsp coriander leaves, finely chopped
Instructions ( 1 cup =255 ml)
  1. firstly, in a large kadai heat oil and add in 1 tsp mustard seeds, 1 tsp chana dal, 1 tsp urad dal, pinch of hing, few curry leaves and 1 dried red chilli. allow to splutter.
  2. further add 3 tbsp peanuts and 10 whole cashews. roast till cashews turn slightly golden.
  3. now add 1 green chilli, 1 inch ginger and ½ tsp turmeric. saute for 30 seconds.
  4. add in 2 cups cooked rice and salt to taste. (use leftover rice or make sure to cool the rice completely before you add)
  5. mix well making sure rice doesn't break.
  6. now turn off the stove and add half lemon and 2 tbsp coriander leaves. mix well.
  7. finally, serve lemon rice with papad or pickle of your choice.

notes:

  • firstly, use leftover cooked rice for great taste.
  • also add grated carrot or mangoes and saute for a minute to make lemon rice more tasty.
  • additionally, increase the amount of green chilli, if you like it to be more spicy.
  • finally, serve lemon rice for breakfast or pack to your lunch box.
