Ingredients
  • 1 cup sugar
  • ¼ cup water
  • ⅓rd cup honey
Instructions ( 1 cup =255 ml)
  1. firstly, in a large vessel dissolve 1 cup sugar and ¼ cup water.
  2. add in ⅓rd cup honey and stir well.
  3. further boil on medium flame for 15 minutes.
  4. stir occasionally, to prevent from burning.
  5. boil till the syrup thickens and turns golden brown.
  6. check for sugar syrup consistency by dropping the syrup into water. make sure the syrup hardens and form crystal. alternatively, check for temperature - 300 degree fahrenheit or 150 degree celsius.
  7. turn off the flame and allow to cool slightly. this helps to thicken.
  8. spoon the candy over butter paper or into the mold cavities.
  9. place a toothpick in center making sure to cover the back of the stick.
  10. allow to cool completely and remove once hardened.
  11. finally, wrap honey lollipops with butter paper, and store in airtight container at room temperature, for up to a month.
