maddur vada recipe | maddur vade recipe | crispy maddur vada with step by step photo and video recipe. there are several ways and variation to this crispy snack recipe. but traditionally it is made from rice flour, semolina, all purpose flour (maida), onions, curry leaves and grated coconut. all these ingredients are mixed with little water to make thick dough. it is later shaped into a patty and then deep fried till crisp.

i had shared quite a few karnataka cusine recipes including regional udupi, mangalore and mysore recipes. however i somehow missed this simple and crisp maddur vada recipe to include in my blog. i realised this only after i got recipe request from one of my readers to share the authentic maddur vade recipe with video. the irony is i prepare this crisp vade frequently for my evening tea or as munching side dish for my husband’s lunch box. but anyway diwali festival is coming up in next few days and hence it is ideal time to release maddur vada as diwali snack recipes.

some important tips and recommendations for a crisp and thin maddur vada snack recipe. firstly, before adding water to the dry ingredients, make to squeeze the onions with dry ingredients. basically the onion would release its juice when squeezed and it helps to release the flavour and moisture. secondly, i have thinly patted the vade to thin round patty but to make life easy you can use round cutter to shape it round. lastly, deep fry these maddur vade in hot oil on medium flame. both the inner and outer layer has to be cooked evenly.

Ingredients
  

  • 1 cup rice flour
  • ½ cup rava / semolina / sooji
  • ¼ cup maida / plain flour / all purpose flour
  • 2 green chilli, finely chopped
  • 2 tbsp coriander leaves, finely chopped
  • few curry leaves, chopped
  • pinch of hing / asafoetida
  • ½ tsp kashmiri red chilli powder / lal mirch powder
  • 1 onion, finely chopped
  • ½ tsp salt
  • 2 tbsp oil, hot
  • water as required, to make dough
  • oil for deep frying

Instructions
 

  • firstly, in a large mixing bowl take 1 cup rice flour, ½ cup rava and ¼ cup maida.
  • also add 2 chilli, 2 tbsp coriander leaves, few curry leaves, pinch of hing, ½ tsp chilli powder, 1 onion and ½ tsp salt.
  • combine well making sure the spices gets mixed well.
  • now heat 2 tbsp oil and pour over prepared flour mixture.
  • roughly mix with the help of spoon and later squeeze & crumble with hand.
  • pour ¼ cup of water and combine well.
  • add more water as required and prepare soft dough.
  • grease hands with oil and pinch small ball sized dough.
  • prepare ball and flatten over greased palm. alternatively use greased plastic sheet / banana leaf or butter paper.
  • deep fry in hot oil. make sure not to over crowd the oil.
  • stir occasionally keeping the flame on medium.
  • fry till the maddur vada turns golden and crisp.
  • finally, serve maddur vada / maddur vade with coconut chutney / green chutney.

notes:

  • firstly, make sure to squeeze onions well before adding water as they release too much moisture.
  • also, use medium rava for authentic maddur vade recipe instead of fine rava.
  • additionally, do not rest dough once prepared as onions might release more moisture and end up in watery dough.
  • finally, maddur vada taste great when prepared thinly and crispy.
