the maida burfi recipe can be prepared in many colour, texture and thickness and softness. the most common one is the plain without any color with hard and uneven texture. however in this recipe i have used 2 colours i.e orange and green and i have presented it with indian flag colour. i wanted to share an easy and simple sweet recipe for this year’s independence day celebration with indian flag as theme. having said that, the food colouring is completely optional and can be ignored if you are uncomfortable with it.

maida burfi recipewhile it is one of the easiest barfi recipes, yet i would like to share few tips and recommendations for maida burfi recipe. firstly, make sure to roast maida on low flame using ghee till it turns aromatic. also make sure to stir the maida mixture till you get thick flowing consistency, further cooking may turn burfi hard and brittle. lastly, layering maida burfi is optional, and can be prepared with single colour.

Ingredients
  • ½ cup ghee / clarified butter
  • 1 cup maida / plain flour / refined flour / all purpose flour
  • 2 cup sugar
  • 1 cup water
  • ¼ tsp cardamom powder / elachi powder
  • 2 drop orange food colour (red + yellow)
  • 2 drop green food colour
Instructions ( 1 cup =255 ml)
  1. firstly, in a wide pan heat ½ cup ghee.
  2. once the ghee is hot add in 1 cup maida.
  3. keeping the flame on low.
  4. roast maida till it turns aromatic. approx. 2 minutes. keep aside.
  5. in another kadai take 2 cup sugar and 1 cup water.
  6. stir well and dissolve sugar.
  7. also get the sugar syrup to boil keeping the flame on medium.
  8. boil the sugar syrup till one string consistency has reached.
  9. now keeping the flame on low add in roasted maida.
  10. stir continuously, till the maida gets combined well without any lumps.
  11. add in ¼ tsp cardamom powder and mix well.
  12. cook the maida mixture till it forms a flowing consistency batter.
  13. divide the maida mixture into 3 equal parts for making 3 layers.
  14. also mix 2 drop orange food colour (red + yellow) and 2 drop of green food colour in each.
  15. spread the orange layer and flatten with a cup.
  16. further spread plain maida layer followed by green layer and flatten with a cup.
  17. allow to rest for 1 minutes or till it sets completely.
  18. now reverse and cut into square pieces.
  19. finally, serve tiranga burfi - maida burfi or store in a airtight container and enjoy for a week.

notes:

  • firstly, roast the maida in hot ghee on low flame till they aromatic. do not over roast as they might taste bitter.
  • also add few chopped nuts to make instant maida burfi more healthy.
  • additionally, adding colour to burfi is optional, however to make tiranga burfi i have added few drops of food colour.
  • finally, tiranga burfi – maida burfi is prepared with 1 string sugar consistency.
