masala puri recipe | masala puri chaat recipe | masala poori recipe with detailed photo and video recipe. basically a spicy, lip smacking street food of india which is prepared by mixing crushed pooris and hot masala gravy from green peas and potatoes. roadside masala puri recipe was originated from southen state of india, but widely appreciated in all northern states today.

i have always been a huge fan of chaat recipes since my childhood. especially after my classes during evening, i use to head directly to street food vendor for these spicy chaat recipes. i used to have masala puri chaat recipe as dessert as it is watery and sweet and spice combination. also the street vendors make masala puri recipe very thin and watery but in this recipe the gravy is on slightly thick. street vendors add water to extend the curry and i personally feel it should be comparatively on thicker side.

furthermore, some useful tips and suggestions before we jump into the recipe. firstly, the masala puri chaat recipe should always be served hot. it would taste pale if served cold. secondly, i have not added green chutney while assembling masala puri. however if you prefer you are more than welcome to add it. in addition, i have used flat puri or papdi in this recipe. you can also use puffed puri used in pani puri. lastly, the toppings and chaat masala can be increased or decreased as per the preference and taste.

Ingredients
for pressure cooking:
  • 2 cup peas, soaked overnight
  • 1 potato, roughly chopped
  • 1 carrot, chopped
  • 2 cups water
  • salt to taste
  • ½ tsp turmeric / haldi
for masala paste:
  • 3 tsp oil
  • ½ onion, roughly chopped
  • 2 green chili, slit lengthwise
  • 2 cloves garlic / lasun, roughly chopped
  • 1 inch ginger, roughly chopped
  • 1 large tomato, roughly chopped
other ingredients:
  • 2 cups water, add as required
  • 1 tsp kashmiri red chili powder / lal mirch powder
  • ½ tsp turmeric / haldi
  • 2 tsp pav bhaji masala powder
  • ¾ tsp aamchur powder / dry mango powder
  • ½ tsp garam masala powder
  • salt to taste
  • ½ tsp fennel powder / saunf powder
  • ½ tsp jaggery
for 1 plate serving:
  • 10-15 flat puri / papdi
  • 2 tbsp sweet tamarind chutney
  • 2 tbsp onion, finely chopped
  • 1 tsp coriander leaves, finely chopped
  • 2 tbsp tomato, finely chopped
  • pinch of kashmiri red chili powder / lal mirch powder
  • fistful of sev
Instructions ( 1 cup =255 ml)
  1. firstly, pressure cook peas, potato, carrot for 3 whistles along with water, salt and turmeric.
  2. mash out the vegetables and keep aside.
  3. further, prepare the masala paste by heating up oil.
  4. saute onions, garlic, ginger and chili.
  5. further add tomatoes and saute.
  6. cool and blend to smooth paste and pour into kadai.
  7. also add pressure cooked vegetables.
  8. further add water and all spices listed above.
  9. mix well, cover and simmer for 20 mins.
  10. crush out the puris and place it in a plate.
  11. pour the masala gravy over puri.
  12. add in sweet tamarind chutney, onions and tomato.
  13. also sprinkle chaat masala and chili powder.
  14. finally, serve masala puri chaat garnished with sev and coriander leaves.

  5. also saute garlic, ginger and chili till the raw aroma disappears.

  6. further add tomatoes and saute till the tomatoes turn soft and mushy.

  7. cool the mixture completely and blend to smooth paste.

  8. transfer the prepared onion-tomato paste into the kadai.

  10. further add 2 cups of water and mix well.

  11. adjust the consistency by adding water if required.

  12. further add red chili powder,  turmeric, pav bhaji masala powderaamchur powder, garam masala powderfennel powder, jaggery and salt.

  13. mix well making sure the spice powders are combined well.

  14. cover and simmer for 20 minutes or till the gravy cooks well.

  15. adjust the consistency by adding water if required. make slightly thick gravy.

  16. to prepare masala puri chaat, crush out the puris and place it in a plate.

  17. further, pour the prepared masala gravy over puri.

  18. add in sweet tamarind chutney.

notes:

  • firstly, pressure cook peans, potato and carrot well. else the gravy will not be of smooth consistency.
  • further, use white peas in-place of green peas.
  • also, adjust the consistency as required by adding water.
  • finally, prepare the masala puri chaat just before serving else the puri will turn soggy.
