mirapakaya bajjimirchi bajji recipe | menasinakai bajji recipe with step by step photo recipe. basically, mirchi bajji is a chilli fritters prepared by deep frying with spiced gram flour coating. mirchi bajji is a popular street food and is also termed as pakora. it is usually eaten as snack, but in some states it served as side dish with the meal. especially in north karnataka and andhra pradesh, it is a must side dish for any meal.

i learnt this recipe from my father, like any other deep fried recipes. he is a specialist in deep fried snacks in our family. perhaps he must have learnt these recipes during his restaurant business. he initially started the hotel business, but unfortunately he had to stop it. during those days, bajii recipe were famous in his hotel. specifically, onion bajji, goli baje, veg bonda recipes. whenever, i go back to india, i ask my father to prepare these yummy snacks.

furthermore, the trick to get a pluffy and crispy bajji is pinch of baking soda and rice flour / corn flour. basically, add a pinch of baking soda to the besan batter and give a rough mix. note that, the baking soda must be added just before the deep frying. otherwise, the mirchi bajji would be soggy and would not turn crispy. also, you can add pinch of chaat masala to your besan batter. this would ensure to deliver chatpata taaste to your bajjis. i also prepare stuffed mirchi bajji, which i will be sharing soon.

Ingredients
  • 3 large green chillis
  • ½ cup chana dal flour / gram flour
  • 1 tsp corn flour / rice flour (optional)
  • ½ tsp kashmiri red chilli powder
  • ¼ tsp turmeric powder
  • pinch of baking soda
  • salt to taste
  • water as required to prepare batter
  • ¼ tsp ajwain / carom seeds
  • oil for deep frying
Instructions ( 1 cup =255 ml)
  1. firstly, slit the chilli, de-seed and wash out the seeds in the running water.
  2. furthermore, in a large mixing bowl, add gram flour and corn flour. you can replace corn flour with rice flour to give extra crispiness.
  3. additionally, add chilli powder, turmeric powder, salt and baking soda
  4. give a good mix and water little by little to prepare batter.
  5. prepare a thick flowing consistency batter.
  6. furthermore, sprinkle little ajwain over the batter.
  7. once the oil is heated, reduce the flame to medium. and dip the deseeded chillis in the prepared batter making sure to coat well.
  8. add drop the chilli gently into the oil. fry both sides until golden brown.
  9. remove from oil and drain on a paper towel to absorb excess oil.
  10. finally, enjoy hot mirchi bajji with masala tea.

notes:

  • firstly, deseed the chillis else it will be spicy.
  • furthermore, rice flour / corn flour is optional. however it makes bajjis more crispy.
  • additionally, add chaat masala or amchur powder for further chatpata flavour.
  • most of all,  chop chilli into 1 inch size and deep fry if you do not prefer whole chillis.
  • finally, squeeze a tsp of lemon juice / salt over the slit green chillies and keep aside for 10-15 min. helps in reducing spiciness.

  2. Adding hing powder to the bajji batter adds extra flavour to the bajji’s. Optional fine cut coriander leaves can also be added to the bajji batter to make it more colourful and tasty! I enjoy trying all your recipes! Thanks
