uttapam recipe | mixed veg uttapam recipe | uttapam batter recipe with detailed photo and video recipe. very similar recipe to masala dosa, plain dosa or any dosa recipe but topped with vegetables like pizza. a thicker version of dosa, which is topped with the finely chopped vegetables like onion, tomato, capsicum and carrot.

dosa recipes are prepared quite frequently in my house and i try different variations of it. mixed veg uttapam recipe is one such recipe which i prepare with any left over vegetables. however i try to add finely chopped onions always and i think onions is a must in any uttapam recipe. moreover, i even prepare uttapam with both dosa batter and left over idli batter. when preparing with dosa batter, i add rava or semolina depending upon the consistency of dosa batter to make it thick.

furthermore, some important tips for a perfect uttapam recipe. i have prepared the batter with 3:1 ratio of rice and urad dal. i have used normal sona masuri rice, however you can use any idli rice or dosa rice. i do not recommend to use basmati rice for this recipe. secondly, i have added finely chopped green chillies as topping, skip this if you do not like it or serving it to kids. lastly, if you are using a idli batter than make sure the batter is bit thin but comparatively thicker to dosa batter.

Ingredients
for uttapam batter:
  • 3 cups rice, sona masuri / dosa rice
  • 1 cup urad dal
  • ½ tsp methi / fenugreek seeds
  • 1 cup thin poha / avalakki / beaten rice
  • salt to taste
  • water for soaking
for toppings:
  • 1 medium sized onion, finely chopped
  • 1 medium sized tomato, finely chopped
  • ½ capsicum, finely chopped
  • 1 carrot, grated
  • few curry leaves, roughly chopped
  • 3 tbsp coriander leaves, finely chopped
  • 1 green chili, finely chopped
  • salt to taste
Instructions ( 1 cup =255 ml)
  1. firstly, in a large bowl, soak 3 cups of rice and methi seeds for atleast 5 hours.
  2. furthermore, soak urad dal for 3 hours.
  3. transfer the soaked urad dal into blender and blend to smooth and fluffy batter.
  4. collect it into a large bowl and keep aside.
  5. further, blend the soaked rice along with poha adding water if required.
  6. transfer to the bowl of urad dal batter.
  7. mix well making sure the batter has combined completely.
  8. also clean the sides with your hand.
  9. cover and ferment in a warm place for 8- 12 hours.
  10. and add salt to the batter and mix well.
  11. furthermore, heat griddle and pour a ladleful of the batter on it and spread it in a circular thick motion.
  12. then spread the prepared vegetable mixture on the surface of the dosa .
  13. also add oil, if preferred.
  14. furthermore, cover it with a lid and cook on medium flame.
  15. let it fry until the base of the dosa turns golden brown.
  16. finally, serve veg uttapam immediately with coconut chutney and sambar.


how to make mixed veg uttapam with step by step photo:

  1. firstly, in a large bowl, soak 3 cups of rice and methi seeds for atleast 5 hours.

  2. furthermore, soak urad dal for 3 hours. do not over soak urad dal as they start to smell.

  3. drain the water from urad dal and keep aside. you can use it if required while blending. urad dal soaked water helps to fasten the fermentation process.

  4. transfer the soaked urad dal into blender and blend to smooth and fluffy batter. add water if required.

  5. collect it into a large bowl and keep aside.
  6. further, blend the soaked rice along with poha adding water if required. adding poha makes dosa slightly soft.

  7. blend to slightly coarse paste. this helps to give nice texture to dosa.

  8. transfer to the bowl of urad dal batter.

  9. mix well making sure the batter has combined completely. also clean the sides with your hand.

  10. cover and ferment in a warm place for 8- 12 hours. the next day you can see the batter has raised well indicating its well fermented.

  11. additionally, mix the batter slightly without spoiling the air incorporated in batter.

  12. further scoop the required batter in a different bowl.

  13. and add salt and water (if required) to the batter and mix well.

mix veg uttapam topping recipe:

  1. firstly, in a large mixing bowl take chopped onions, tomato and capsicum.

  2. furthermore, add grated carrot and curry leaves.

  3. also add coriander leaves.

  4. additionally add green chili and salt to taste.

  5. mix well and the topping is ready to prepare uttapa.

  1. heat the griddle. smear some oil over the tawa and wipe off with a tissue paper. (do not add oil if using non-stick pan)
  2. pour a ladleful of the batter on it and spread little bit in a circular motion.

  3. then spread the prepared vegetable mixture on the surface of the dosa.

  4. also add oil, if preferred.

  5. furthermore, cover it with a lid and cook on medium flame.

  6. let it fry until the base of the dosa turns golden brown and the batter on the surface should look completely cooked (in presence of steam).
  7. then fry the dosa on the other side until it turns light brown. press a little so that the vegetables gets fixed into batter.

  8. finally, serve veg uttapam immediately with coconut chutney and sambar.

notes:

  • firstly, the consistency of the dosa batter is very important for uttapam recipe.
  • furthermore, using cast iron gives a nice even browning and crisp uttapam than the non-stick pan.
  • also do not forget to flip over to cook on both the sides.
  • finally, varry the vegetables according to your preferences to make mix veg uttapam more healthy.
