moong dal halwa recipe | moong dal sheera recipe with detailed photo and video recipe. basically, a dense sweet prepared from grounding the soaked moong dal and then prepared with ghee and sugar.

while most of my recipes either comes from my family tradition or from my friends. however, this exotic rajasthani dessert recipe is something i learn’t form my previous trip to north india. well, i think i had shared my experience previously in kachori recipe. anyway, my first encounter to this amazing dessert recipe was in jaipur. initially, i was bit skeptical, as it was dripping with excess amount of ghee. however i was so much thrilled to taste this marvellous juicy moong dal halwa.

i am great fan of moong dal so have shared moong dal kachorimoong dal carrot saladmoong dal khichdi and moong dal. furthermore, moong dal halwa is served especially during winter. in other words, any grain based halwa or sheera are served during cold seasons. this is because the moong dal halwa or any grain based halwa’s are prepared with generous amount of ghee. ghee which contains large amount of fat helps to cope the harsh cold season. moreover, grains like moong dal, do produce a lot of heat when consumed.

Ingredients
for soaking:
  • ½ cup moong dal
  • 2 cups hot water
other ingredients:
  • 3 tbsp ghee / clarified butter
  • 10 cashews, half
  • 4 almonds, for garnishing
  • 15-20 raisins
  • ¼ cup water
  • ¾ cup milk
  • ½ cup sugar
  • 4 cardamom, powdered
  • 2 tbsp saffron milk
Instructions ( 1 cup =255 ml)
  1. firstly, soak moong dal in enough hot water for atleast 2-3 hours. using hot water soaks the dal fast.
  2. furthermore, drain the moong dal and keep aside for 30 minutes. so that all water is dried off.
  3. now transfer it to a blender and blend to coarse paste without adding any water. keep aside.
  4. also take a non stick kadai and heat 3-4 tbsp of ghee.
  5. furthermore, take cashews and pista or dry fruits of your choice.
  6. fry cashews and raisins till they turn golden brown on medium flame. keep aside.
  7. now add the moong dal paste.
  8. saute on low to medium flame for atleast 15 minutes.
  9. saute till they turn crumble.
  10. break the crumbled moong dal and fry till they turn golden brown.
  11. furthermore, add water.
  12. also add milk and boil for a 1 minute.
  13. then add sugar and mix well.
  14. cover and cook on low flame for 5-7 minutes or till it forms a lump separating the pan.
  15. now add cardamom powder and saffron milk.
  16. also add roasted cashews and raisins. preserve few for garnishing.
  17. give a good mix and transfer to a bowl.
  18. finally, garnish with few almonds, cashews and raisins.

notes:

  • firstly, to make it more rich, add khoya along with milk.
  • also replace water with milk and cook moong dal.
  • furthermore, keep sautéing moong dal paste on low flame, else they will burn.
  • additionally, replace saffron milk with food colour for more rich colour.
  • finally, use more ghee if you are not using non-stick pan.
