i have already shared the south indian version of curd vada which is more subtle and simpler with less spicy. whereas north indian dahi vada is more chatpata version and also the vada’s are not shaped like doughnuts with a hole in the center. further the later version of may contain raisins and cashews in batter of vada. basically the raisins and cashews helps to give sweet and nutty texture to north indian dahi bhalle. i personally do not prefer the raisins in my vada and hence i have skipped it.

dahi bhalla recipefurthermore, some important tips and recommendations for a creamy and chatapata dahi vada recipe. firstly, ground the soaked vada’s with very less water and the batter should be thick and smooth. in addition deep fry the vada’s in a medium heat oil otherwise the vada may absorb more oil. secondly, once the vada’s are deep fried, soak them immediately in lukewarm water. otherwise the dahi bhalla would not turn smooth and soft and would result in hard texture. finally, beat and whisk the curd to smooth texture and optionally add some sugar for a sweet and less sour taste.

Ingredients
for vada (20 vadas)
  • ¾ cup urad dal
  • 1 green chilli
  • 1 inch ginger
  • salt to taste
  • oil for deep frying
for serving 1 plate:
  • 3 tbsp curd / yogurt, thick
  • 2 tsp green chutney
  • 2 tsp tamarind chutney
  • pinch of chilli powder
  • pinch of cumin powder
  • salt to taste
  • pinch of chaat masala
  • few coriander leaves, finely chopped
Instructions ( 1 cup =255 ml)
  1. firstly, soak urad dal and prepare batter adding chilli and ginger.
  2. transfer the batter into a large bowl.
  3. beat the batter in one direction for 5 minutes to get more fluffy and smooth batter.
  4. now add salt to taste, and mix lightly. do not rest long after adding salt, as it leaves water and makes batter watery.
  5. now dip your hand in water, and start make lemon sized vadas.
  6. drop them one by one to hot oil.
  7. keep the flame in lower to medium stir occasionally.
  8. also fry the vadas till they turn golden brown.
  9. drain off the vadas on to kitchen towel to absorb oil.
  10. immediately, drop the vadas into lukewarm water and dip the vadas completely.
  11. soak for 5 minutes and allow the vadas to absorb water.
  12. furthermore, squeeze off the water by pressing between your palm.
  13. place 3-4 squeezed vadas on the serving plate.
  14. pour in 3 tbsp thick whisked curd.
  15. also add in 2 tsp green chutney and 2 tsp tamarind chutney.
  16. furthermore, sprinkle pinch of chilli powder, cumin powder, chaat masala and salt.
  17. finally serve dahi bhalla garnished with few coriander leaves.


how to make dahi vada recipe with step by step photo:

  1. firstly, soak urad dal in enough water for 3 hours. do not over soak urad dal as they absorb oil while deep frying.

notes:

  • firstly, do not over soak dal as it absorbs oil while deep frying.
  • also make sure to drop the batter in hot oil else vadas will not turn crispy.
  • additionally, add cashews and raisins to the batter to make it more rich.
  • finally, soak vadas in curd and later serve dahi vada / dahi bhalla as required.
