paan kulfi recipe | instant paan ice cream | no cook kulfi recipe with detailed photo and video recipe. sweet and creamy kulfi recipe prepared with paan leaves or betel leaves with condensed or thick sweetened milk. this kulfi recipe is an instant version without any cooking and is prepared by mixing meetha paan with dates or gulkand in creamy condensed milk.
paan kulfi recipepaan kulfi recipe | instant paan ice cream | no cook kulfi recipe with step by step photo and video recipe. typically paan kulfi is prepared with meetha paan ingredients like paan leaves and gulkand mixture. however i did not have gulkand or dry rose essence. hence i have used dried dates which should serve the same purpose. i would not recommend to prepare with paan kulfi with the tobacco version of paan and it is meant to be prepared only with meetha paan.

this recipe of paan kulfi is very similar to my previous no cook mango kulfi recipe in which i have used mango pulp with condensed milk. however in this recipe, i had to substitute the quantity of mango pulp for which i used plain milk with cream and condensed milk. furthermore, traditionally paan ice cream is prepared with readymade paan with all the stuffing in it and especially with gulkand and mukwaas. however i was not having both  and hence i have used seedless dates or khajur for the same purpose. trust me the combination of paan leaves, dates and fennel seeds would make your day.

instant paan ice creamwhile it is the one of the simplest dessert recipes and yet i would like to share some tips and recommendations to make a perfect paan kulfi recipe. firstly, this is a no cook kulfi recipe and hence i have used condensed milk. however you can also prepare by boiling 2 cups of milk with quarter cup of sugar. alternatively you can use half cup of evaporated milk with quarter cup of sugar too. secondly, make sure not to use supari or areca nuts while using meetha paan from paan wala. lastly, you can skip the betel leaves to prepare the simple plain kulfi recipe.

Ingredients
  • ¾ cup thickened cream / malai, 35% milk fat
  • ½ cup milkmaid / condensed milk
  • 2 tbsp dates / khajoor, chopped
  • ½ cup full cream milk
  • 3 paan leaf / betel leaf
  • 1 tbsp almonds / badam, chopped
  • 1 tbsp pistachios, chopped
  • ¼ tsp cardamom powder / elachi powder
  • 1 tbsp cashew / kaju, chopped
  • 1 tsp saunf / fennel, crushed
  • 2 drops green food colour, optional
Instructions ( 1 cup =255 ml)
  1. firstly, in a large mixing bowl add ¾ cup thickened cream. preferably use 35% milk fat.
  2. beat or whisk for a minute or till stiff peaks appear.
  3. further add ½ cup milkmaid and ½ cup full cream milk. add more milkmaid if you prefer it to be more sweet.
  4. give a mix making sure everything is combined well.
  5. additionally, add 3 paan leaf chopped finely.
  6. add 2 tbsp dates, 1 tbsp almonds, 1 tbsp pistachios, 1 tbsp cashew, ¼ tsp cardamom powder, 1 tsp saunf.
  7. also add 2 drops green food colour.
  8. mix well making sure everything is combined well.
  9. transfer the mixture to matka or kulfi mould.
  10. cover and freeze for 8 hours or till it sets completely.
  11. finally, serve paan kulfi recipe garnished with few chopped nuts.

notes:

  • firstly, add gulkand along with other nuts to make paan kulfi more tasty.
  • also, to prepare kulfi in traditional way by boiling milk, check out kesar pista kulfi recipe.
  • additionally, adding fresh paan leaves to kulfi makes kulfi more flavour. so adjust the quantity to your choice.
  • finally, paan kulfi recipe stays good for a month atleast when freezed.
