parotta recipe | kerala paratha recipe | malabar paratha recipe | kerala parotta recipe with detailed photo and video recipe. popular south indian layered all purpose flour flatbread recipe which is also popularly known as malbar parotta or malbari parotta. this parotta is very similar north indian paratha recipes but does not have any stuffing within it and is typically served for breakfast and lunch.

while this paratha hails from south india, it has very similar attributes to north indian lachha paratha. both paratha’s are layered and follows the same recipe preparation with spiral and rolling. however there are subtle difference between these 2 parathas. firstly, lachha paratha is usually prepared with equal proportion of wheat and all purpose flour and hence it has less gluten. whereas malabar parotta is entirely made by maida and hence it is more stretchy and has more gluten.

furthermore, some important tips and suggestions for a perfect kerala paratha recipe. firstly, i have not added egg yolk in this recipe, however if added it makes the parotta more soft and layered. secondly, kneading the dough to 10 to 15 minutes is very important for this recipe. this ensures the maida releases gluten which helps to have a layered parotta. lastly, i have rested the dough at each step and it is very important too. once the dough is kneaded, it has to be rested with some oil at the top. again once the spiral balls are prepared it has to be rested.

Ingredients
for dough:
  • 2 cup maida / plain flour / refined flour
  • 1 tsp sugar
  • salt to taste
  • 2 tbsp + 2 tsp oil
  • water as required, to knead
for roasting:
  • 4-5 tsp oil, add as required
Instructions ( 1 cup =255 ml)
  1. firstly, take maida, sugar, salt and oil.
  2. give a good mix, add water as required and start to knead for 15 minutes.
  3. cover and rest for atleast 1 hour.
  4. further, pinch a small ball sized dough and flatten it.
  5. roll the dough thinly.
  6. now pull and stretch from sides making sure they are stretched as much as possible.
  7. grease the parotta with oil.
  8. now start creating pleats by folding with the help of fingers.
  9. stretch the pleated dough as much as possible.
  10. begin to roll the pleated dough like a swiss roll.
  11. furthermore, secure the end by pressing gently.
  12. start pressing the ball into slightly thin circle with the help of greased palm.
  13. take hot chapathi tawa and place the rolled paratha.
  14. after a minuter flip off and cook the other side.
  15. once the golden brown spots start appearing on both sides grease with oil.
  16. furthermore, flip and roast both sides.
  17. then crush the paratha to form layers.
  18. finally, serve hot kerala parotta immediately with curry of your choice.

  1. firstly, in a large mixing bowl take 2 cups of maida.

    • parotta is always prepared from maida. wheat does not have gluten and hence you would be not able to get the flaky or layered parotta. but still you can prepare it with wheat

  1. I prepared kerala parts. But didn’t come out good. Layers were not formed. I could not stretch it as u did. Give suggestion.

    • if you use good quality of maida, you should be able to. maida has gluten and when kneaded propely with oil, you should be able to stretch it.
