i prepare this recipe especially when i am short of time and i need something special for my dinner. easily this pav bhaji recipe can be prepared within minutes. basically, the cooking and boiling of vegetables are avoided and cooked together in cooker. well i personally prefer preparing the traditional way, as it blends together the spices with vegetables. but this instant recipe is certainly a time saving especially if you are planning to prepare it for lunch boxes in early morning.

furthermore, i would like to highlight some variations and tips for ideal pav bhaji recipe. firstly, if you prefer a dark red colour to pav bhaji, than add some diced beetroot with potatoes. secondly, add pav bhaji masala powder after the 3 whistles so that the aroma stays fresh. but make sure to cook for 4-5 minutes after the spice powder is added. lastly, if you prefer spicy pav bahji recipe, than add some green chillies while sautéing.

Ingredients
  • 1 tbsp butter
  • 1 medium sized onion, finely chopped
  • 3 small sized tomatoes, finely chopped
  • 1 tsp ginger-garlic paste / adrak - lasun paste
  • 1 small sized capsicum, chopped
  • ½ cup peas / matar, fresh / frozen
  • 1 large sized potato, cubed
  • 1 tsp kashmiri red chili powder / lal mirch powder
  • ½ tsp turmeric / haldi
  • 2 tsp pav bhaji masala
  • salt to taste
  • 1.5 cups water
other ingredients:
  • 2 tsp butter
  • 5 pav / bread
  • ½ onion, finely chopped
  • 3 tbsp coriander leaves, finely chopped
  • 1 lemon, sliced
Instructions ( 1 cup =255 ml)
  1. firstly, in a pressure cooker heat butter and saute onions.
  2. also add ginger-garlic paste and saute.
  3. additionally, add capsicum and saute for a minute.
  4. furthermore, saute tomatoes till they turn soft and mushy.
  5. now add green peas, potato and saute for a minute.
  6. further, add chili powder, turmeric, pav bhaji masala and salt. saute well for a minute.
  7. also add 1.5 cups of water and mix well.
  8. cover and pressure cook for 3 whistles and mash all the vegetables well.
  9. optionally, add a tsp of butter for more flavours.
  10. now, heat tawa and add a tsp of butter and prepared pav bhaji.
  11. further, slit the pav in centre.
  12. spread and toast both the sides.
  13. finally, serve pav bhaji along with toasted pav garnished with few chopped onions, coriander leaves and a piece of lemon.

  1. firstly, in a pressure cooker heat butter.

  2. further saute finely chopped onions till they turn translucent.

  3. also add ginger-garlic paste and saute till the raw smell of ginger and garlic disappears.

  4. additionally, add capsicum and saute for a minute.

  5. furthermore, saute tomatoes till they turn soft and mushy.

  6. now add green peas, potato and saute for a minute. use frozen or fresh peas.

  7. further, add chili powder, turmeric, pav bhaji masala and salt. saute well for a minute.

  8. also add 1.5 cups of water and mix well.

  9. cover and pressure cook for 3 whistles or till veggies are cooked completely.

  10. once the pressure is released, mash all  the vegetables well.

  12. now, heat tawa and add a tsp of butter and prepared pav bhaji.

notes:

  • firstly, add more vegetables of your choice to make it more nutritious.
  • additionally, adjust the spice level by varying the amount of chili powder.
  • also pressure cook till all vegetables are cooked completely.
  • moreover, pav bhaji taste great when prepared on tawa rather than pressure cooker. refer the recipe for pav-bhaji in tawa.
  • finally, pav bhaji in pressure cooker can also be prepared in open vessel like served in streets of mumbai.
