vegetable sambar recipe | quick mixed veg sambar recipe with detailed photo and video recipe. basically, an easy version of sambar recipe where both vegetables and lentils are pressure cooked together. later it is spiced with sambar powder and tamarind juice to complete the sambar recipe process.

i have already posted authentic sambar recipe prepared in similar way. however, it was not having a video and it could be time consuming for busy moms and working wives. moreover, i was getting huge request to prepare a simple and quick sambar recipe. hence i thought of preparing and posting quick mixed veg sambar recipe, yet not compromising on the taste and flavoUr. more surprisingly, my husband liked it so much as he is very particular about his sambar recipes.

furthermore, sambar recipe is open ended recipe with respect to adding vegetables. however, to get the authentic taste, drumstick is always added to get the rich and juicy taste. hence do not skip adding drumstick while preparing this sambar. in addition, you can add radish, carrot, eggplant, beans and potato. moreover, for any sambar recipe, sambar powder is very critical. you can add any store bought sambar powder or you can refer my homemade sambar powder recipe.

Ingredients
for pressure cooking:
  • ½ cup toor dal / arhar dal / split pigeon pea
  • 2 cups water
  • ¼ tsp turmeric powder / haldi
  • 1 cup radish / mooli / mulangi, chopped
  • 5-6 pieces drumstick
  • ½ cup carrot, chopped
other ingredients:
  • 1 cup tamarind juice
  • 1 green chilli. slit lengthwise
  • ¾ tomato, finely chopped
  • few curry leaves
  • ½ tsp turmeric powder / haldi
  • ¾ tsp jaggery
  • ½ onion, cubed
  • salt to taste
  • 1 tbsp sambar powder
for tempering:
  • 2 tbsp coconut oil / cooking oil
  • ¾ tsp mustard seeds / rai
  • pinch of hing / asafoetida
  • 2 dried red chilli
  • few curry leaves
Instructions ( 1 cup =255 ml)
pressure cooking dal and vegetables recipe:
  1. firstly in a pressure cooker take half cup washed toor dal.
  2. furthermore add 2 cups of water. or water as required to cook dal.
  3. also add turmeric powder.
  4. then place a small bowl into a pressure cooker.
  5. add veggies (radish, carrot, drumstick) or vegetables of your choice into the bowl. do not add any water.
  6. then cover the cooker and pressure cook for 5 whistles on medium flame.
  7. finally, once the pressure releases, take off the cooked vegetables and mash dal well.
mix veg sambar recipe:
  1. firstly, in a large kadai squeeze 1 cup of tamarind juice.
  2. furthemore, add chilli, tomatoes, curry leaves and turmeric powder.
  3. also add jaggery .
  4. then get the tamarind water to boil.
  5. further add onions and salt.
  6. mix well and boil for 5 minutes.
  7. then add cooked vegetables and get to a boil again. do not over cook as vegetables are already cooked .
  8. further add mashed dal and give a good mix.
  9. get the sambar to boil. do not over boil after adding dal as it results to indigestion.
  10. then add udupi style sambar powder and give a quick mix. else the sambar powder will form lumps.
  11. further boil for a minute and switch off the stove.
  12. prepare the tempering by heating oil in a small kadai.
  13. further add mustard seeds, hing, red chilli and curry leaves.
  14. once they splutter, pour immediately into the sambar.
  15. finally, give a good mix to vegetable sambar and serve with hot steamed rice.

notes:

  • firstly, use vegetables of your choice like brinjal, potato or beans.
  • furthermore, instead of pressure cooking vegetables, cook veggies in tamarind juice for more flavours.
  • additionally, mash the dal well before adding to sambar. else they will not be of smooth consistency.
  • finally, mix vegetable sambar taste great when tamarind is boiled for minimum of 5 minutes.

    I loved your quick n easy recipe. Can we use brown sugar instead of jaggery since I don’t have jaggery now at home.

  2. As per Ayurveda, cooking veggies in tamarind juice will retain it properties as it is… Health benefits will be more. Hing lovers can add hing along with dhal. It enhance the flavour’s.
