But rava barfi or suji burfi is a new variant that is prepared very similar to suji ladoo which is later shaped into square or diamond solids. It can be an ideal and economical sweet for any occasion and celebration.

As I mentioned previously, a recipe for rava burfi or sooji barfi is extremely simple. The recipe for this barfi is very similar to the traditional suji ladoo. I have also added milk powder and dry coconut for rich flavour and texture. Semolina by itself would not give much flavour, hence adding coconut and milk powder will enhance. Moreover, it also adds moistness to the barfi. Having said that coconut grate is not mandatory and can be filled with other alternatives. You may use common ingredients used as fill, plain flour, besan flour, or even milk powder to solve the purpose.

Furthermore some important tips and recommendations to this exotic rava burfi recipe. Firstly, I have used medium-sized Upma rava or Bombay rava for this recipe and I recommend the same for this barfi. I have not tried with fine rava but it should be alright but certainly not the thick semolina. Secondly, the barfi can be made more attractive by adding food colors especially yellow or red, or perhaps mixing. Moreover, you can also add kesar for the orange color. Soaking the kesar strands in hot water should yield more dark color. Lastly, I like it when served chilled but can be served both warm or chilled.

Ingredients
  

  • 1 cup ghee
  • 2 cup rava / suji, coarse
  • ½ cup dry coconut, grated
  • ¼ cup milk powder
  • 2 cup sugar
  • 1 cup water
  • ½ tsp cardamom powder
  • 2 tbsp nuts, chopped

Instructions
 

  • Firstly, in a pan heat 1 cup ghee and roast 2 cup rava on low flame.
  • Roast until the rava turns aromatic and sandy texture.
  • Now add ½ cup dry coconut, ¼ cup milk powder and roast for a minute.
  • Do not brown the rava else the colour of burfi will change. Keep aside.
  • In a large kadai take 2 cup sugar and 1 cup water.
  • Stir and boil till you attain 1 string consistency.
  • Keeping the flame on low, add roasted rava and mix well making sure there are no lumps.
  • Now add ½ tsp cardamom powder and mix well.
  • Cook on low flame until the mixture turns non-sticky and starts to hold the shape.
  • Transfer to the tray greased with ghee.
  • Top with nuts and dry coconut. Rest the burfi for 10 minutes to set.
  • When the burfi is still warm, cut into pieces.
  • Finally, enjoy Rava Burfi Recipe for a month when stored in an airtight container
