rava laddu falls under traditional indian sweet. i am not a big fan of rava laddu, but my husband and brother loves this laddu. i prefer besan ladoo as they are more tasty and prepared with ghee. rava laddu are easy to prepare if you know to get right sugar string consistency. follow the instructions carefully to get perfect laddus for this diwali, ganesh chaturthi and janmashtami festival.

sooji ladoo

rava means semolina / sooji / bombay rava.  this recipe is shared by my granma who is master in preparing sweets. suji ladoo falls under 1 string consistency sweet as of kaju burfi. do not thicken the sugar more else ladoos would turn hard and you wont be able to eat. the rava is rosted in ghee to get the rich aroma. and the crunchy bites of dry fruits along with coconut flavour makes a perfect laddu for festival.

Ingredients
  • 1 cup rava / semolina / bombay rava
  • 2 tsp dry shredded coconut / fresh coconut
  • ¼ cup water
  • 2 tbsp ghee (clarified butter)
  • 1 cup sugar
  • 10 cashew nuts, broken into halves
  • 10 raisins
  • 3 tbsp milk , optional
Instructions ( 1 cup =255 ml)
  1. take a thick-bottomed kadai and 2 tbsp ghee in it.
  2. fry the cashew nuts and raisins in the ghee until raisins puff up and cashews turn golden brown. transfer them to the plate and keep aside.
  3. add 1 cup rava in remaining heated ghee and fry on low flame. roast the sooji until it changes colour to light brown and turns aromatic.
  4. add shredded coconut and roast for a minute more. ( this is optional, however adds flavour)
  5. turn off the flame and allow rava to cool to room temperature.
  6. meanwhile, take another vessel and add 1 cup sugar
  7. now add ¼ cup water and prepare sugar syrup / chashni on medium flame.
  8. boil till you get lightly one string consistency.
  9. slowly add dry fruits and prepared sugar syrup to the roasted rava and stir continuously to avoid lumps.
  10. cool for some time and when its still warm enough, prepare laddus with your palm. if it turns hard or if ladoos are breaking, add 2-3 tablespoons of warm milk little by little, mix well and prepare small round shaped laddus from mixture.
  11. rava laddus are ready to serve.

notes:

  • store in an airtight container.
  • sugar syrup should just attain 1 string consistency. otherwise mixture turns hard after adding roasted rava and you are not able to make laddus. if it happens, add 2-3 tablespoons of warm milk little by little, mix well and prepare small round shaped laddus from mixture.
  • you can avoid coconut if you do not like its flavour.
  • make sure that rava is roasted properly else it will turn sticky and doesn’t taste great.
  • add dry fruits of your choice.
