i love to use any vegetables into this dish. however; it tastes much better with veggies like carrot, cabbage, beans and capsicum. these ingredients are used in oriental cooking. in the authentic schezwan noodles recipe they usually use long and crunchy bean sprouts.

traditionally, these recipes are tried from sichuan peppers, however this indo-chinese or indo chinese cuisine is prepared from red chillies, vinegar, garlic and black pepper. the result is almost same as the sauce prepared from sichuan peppers

Ingredients
cooking noodles:
  • 1 pack of hakka noodles or plain noodles,
  • 1 tsp oil
for making schezwan noodles:
  • 3-4 garlic, finely chopped
  • 3 spring onions, finely chopped
  • ¼ carrot, finely chopped
  • 3 beans, finely chopped
  • ¼ cup cabbage, thinly shredded
  • 4 mushroom, thinly sliced
  • ¼ cup green capsicum, finely chopped
  • ¼ cup yellow capsicum, finely chopped
  • ½ tsp black pepper or as required
  • 1 tbsp schezwan sauce or you can increase as required
  • 1 tbsp vinegar
  • salt as required
  • soy sauce (optional)
  • 3 tsp oil
Instructions ( 1 cup =255 ml)
  1. boil the water and add a tsp of oil and some salt.
  2. heat oil, add the garlic and saute for a few seconds.
  3. increase the flame and then add chopped white bulbs of spring onio. saute for a minute.
  4. add the french beans, cabbage, carrot. keep on stir frying on high flame for about 3 to 4 minutes.
  5. then add mushrooms. keep on stir frying the veggies on the high flame.
  6. stir fry till the edges of the mushrooms start to slightly brown.
  7. now add chopped capsicum and give a final stir.
  8. reduce the flame to medium heat and black pepper, schezwan sauce and salt. stir well.
  9. add the cooked hakka / plain noodles and stir fry.
  10. add vinegar and mix well. also add the chopped spring onions to schezwan noodles.
  11. enjoy schezwan noodles hot with some tomato ketchup.

notes:

  • firstly, do not add too much oil while preparing schezuan noodle; as the schezwan sauce already has good amount of oil in it.
  • in addition, you can also add half tsp of soya sauce at the end.
  • also, to retain the crunchiness in your vegetables. do not over cook the vegetables.
  • furthermore, make sure to cook noodles perfectly. do not overcook or undercook it. it should be soft yet slightly crunchy.
  • cool down the noodles completely before you add them to the stir fried veggies.
  • finally, you can also use cooked vegetables if you do not want to stir fry.
