Ingredients
  • 10 dry red kashmiri chilies / bedigi chillies
  • 1 tbsp ginger - garlic paste
  • ¼ onion
  • 2 to 2.5 tbsp oil
  • ½ tsp black pepper powder / sichuan peppers powder
  • 1 tbsp vinegar
  • 1 tbsp light soy sauce
  • 2 tbsp oil (preferably sesame oil)
  • water for grinding the red chillies
Instructions ( 1 cup =255 ml)
  1. soak red chillies / begdi chillies in hot water for 30 minutes. if you do not like it to too spicy, then remember to de-seed the chillies before you soak them.
  2. blend the soaked chillies to smooth chutney.
  3. now heat oil and saute ginger and garlic till the raw smell goes away. if you planning to store this sauce for a long time then add more oil.
  4. next to saute finely chopped onions till they turn translucent.
  5. now add blended chilli paste stir well.
  6. you can see the oil will start releasing from the sides of the sauce. saute till then on medium flame.
  7. then add the crushed pepper.
  8. add salt, soy sauce and vinegar.
  9. stir and continue to cook for another 5 minutes more.
  10. make sure to cool down the schezwan sauce completely before you store in a air tight container. you can use this to prepare schezwan fried rice or schezwan noodles

  7. then add the crushed pepper. usually we add schezwan pepper. however you can alternatively add black pepper as well. schezwan pepper has a lemony taste in it.

  8. add salt, soy sauce and vinegar.

  9. stir and continue to cook for another 5 minutes more.
  10. make sure to cool down the schezwan sauce completely before you store in a air tight container. you can use this to prepare spring dosaschezwan fried rice or schezwan noodles.

notes

  • the sauce stays fresh for 3 weeks in an air-tight container. but you need to store in the refrigerator.
  •  schezwan sauce can be served as a condiment for snacks.
  • you can also use in preparing spring dosa, schezwan fried rice or noodles.
  • choose less spicy like kashmiri chillies which gives bright red color and will make it less spicy.
  • you can also have combination of kashmiri chillies and hot chillies.
  • i have used less oil while making it. because i used it the same day in preparing spring dosaschezwan fried rice and noodles .
  • if you want to store for 2 weeks then use more oil. also cook the sauce till oil starts to float on top.
