while most of them prepare sev puri with papdi’s as its base, however according to me it is papdi chaat and not sev puri. sev poori should always be prepared with puri which is hollow in shape or those puri which is used in pani puri. well at the end of the day it is all about preferences, but i personally like sev puri with puffed puri. you are more than welcome to use the flat puri or papdis and follow the same toppings and layering.

in this recipe i have used home made puri recipe which is prepared from semolina. however, if you do not wish to take the hassle of preparing pooris, then you should be good with store bought puri’s too. moreover, these days you even get dry pooris like pappad which you just need to fried in hot oil and ready to use. i personally recommend buying dry pooris over ready made pooris as it would be more thrifty. moreover, ready made pooris turn soft or soggy over time if it is not used in day or two.

Ingredients
  • 6 puri/ papdis
  • 1 potato, boiled
  • 6-7 tsp green chutney
  • 6 tsp tamarind chutney
  • 3 tbsp onion, finely chopped
  • 3 tbsp tomato, finely chopped
  • ¼ tsp kashmiri chilli powder
  • ½ tsp roasted cumin powder
  • pinch of chaat masala
  • pinch of black salt / salt
  • ¼ cup sev
  • 1 tsp coriander leaves, finely chopped
Instructions ( 1 cup =255 ml)
  1. firstly, take puri and make a hole at the centre with the help of thumb.
  2. furthermore, stuff a tsp of boiled potato into each puris.
  3. also, add a tsp of green chutney into each puris.
  4. further, add a tsp more tamarind chutney.
  5. sprinkle and spread a generous amount of finely chopped onions over it.
  6. also sprinkle and spread finely chopped tomatoes over it.
  7. then sprinkle chilli powder, roasted cumin powder, chaat masala.
  8. furthermore, sprinkle black salt or salt to taste.
  9. then sprinkle and spread handful of thin sev.
  10. finally, top up with finely chopped coriander leaves and serve immediately.
