probably, vermicelli upma is a common breakfast in myriad households of south india. perhaps because of the simplicity and easy steps involved in preparing seviyan upma. i prepare this very often for breakfast and even for evening snacks and we never get bored of this recipe. furthermore, i even prepare pulao from vermicelli and vermicelli kheer which i have already shared the recipe with video.

in addition to the simplicity of the vermicelli upma recipe, it has to offer several health benefits for human body. seviyan is full of carbohydrates, yet they are not so filling and also very low in cholesterol. furthermore, vermicelli’s are low in sodium and is recommend for blood pressure or hypertension patients.

Ingredients
  • 1 cup seviyan or fine whole wheat vermicelli
  • 4 cups water
  • ½ medium sized onion, finely chopped
  • 9-10 curry leaves
  • ½ tsp mustard seeds
  • 1 tsp urad dal
  • ¾ tsp channa dal
  • 1 dried red chilli
  • 1-2 green chilli, chopped
  • 1 inch ginger, finely chopped
  • a pinch of asafoetida/hing (optional)
  • ½ tsp turmeric powder
  • salt as required
  • sugar (optional)
  • 2 tbsp oil or ghee
  • few cashews
  • few coriander leaves for garnishing
Instructions ( 1 cup =255 ml)
  1. firstly, roast the vermicelli till browned with 1-2 tsp of oil or you can use ready roasted vermicelli
  2. spread the vermicelli on a plate or in a bowl and allow it cool completely.
  3. furthermore, boil the water in a large vessel adding some salt. add roasted vermicelli to the water.
  4. cook till they are soft - approximately 5 minutes. then drain the vermicelli and keep it aside.
  5. heat oil or ghee in a pan. add the mustard seeds, urad dal, channa dal, asafoetida, curry leaves. and let the mustard seeds pop.
  6. add the onions, ginger, green chill, red chili (optional) and saute till onions become translucent.
  7. also add turmeric, salt, sugar and stir for a few seconds.
  8. furthermore, add the drained vermicelli and lower the flame.
  9. give a good mix so that vermicelli gets coated well with spices.
  10. in addition, add the lemon juice and stir well.
  11. finally, serve sevai uppittu garnished with some coriander leaves and cashews.

notes:

  • firstly, you can also add some groundnut / cashews while seasoning to enhance the taste.
  • make sure you fry vermicelli with a tsp of oil and then cool down completely before adding to boiling water.
  • furthermore, add veggies of your choice to make it more nutritious.
  • moreover, if you prefer to be more spicy, then add more green chilli.
  • finally, adding ghee makes vermicelli more flavourful.

    • rice vermicelli are usually thin and are more tastier than wheat. wheat noodles can stick together and form lump where as rice noodles do not stick to each other of cooked properly.
