soya biryani recipe | soya chunks biryani recipe | meal maker biryani with detailed photo and video recipe. simple, healthy and protein packed biryani recipe, which is mainly prepared with soya chunks layering curry with long grain basmati rice. it is a perfect alternative to the traditional vegetable biryani recipe with some soft and chewy soya chunks.
this recipe is very similar to my previous paneer biryani or dum aloo biryani recipe. however in both of my previous recipe, i have not added any extra vegetables apart from the corresponding main ingredient. but for the soya biryani recipe, i have added diced potatoes, carrots and capsicum so that there is perfect balance of vegetables with meal maker. having said that, you can completely skip the vegetables to prepare just with soya chunks.
furthermore, some important tips and suggestions for a perfect soya chunks biryani recipe. firstly, soya chunks should be soaked or boiled in water before it is mixed for marination. this step helps to remove the impurities in it and avoids the indigestion. secondly, adding vegetables for marination is open ended and you can extend it by adding gobi, mushroom, snow pea, paneer, peas and even beans. lastly, i have layered the marinated gravy with soaked rice in cooker. alternatively you can cook soya biryani in a open vessel with soaked rice and simmered for 20 minutes.

Ingredients
for marination:
- 1 cup soya chunks
- 1 cup curd / yogurt, thick
- ¼ tsp turmeric / haldi
- 1 tsp kashmiri red chilli powder / lal mirch powder
- ½ tsp ginger garlic paste
- 1 tbsp biryani masala powder
- ½ tsp salt
- ½ carrot, chopped
- 1 small potato, cubed
- ½ capsicum, cubed
- ½ onion, petals
other ingredients:
- 2 tbsp + 1 tsp ghee / clarified butter
- 1 bay leaf / tej patta
- 1 inch cinnamon / dalchini
- 5 cloves / lavang
- 1 star anise
- 4 cardamom / elachi
- ½ tsp pepper
- 1 tsp cumin / jeera
- 1 onion, finely chopped
- ½ tsp ginger garlic paste
- 1½ cup basmati rice, soaked
- ¾ tsp salt
- 3 tbsp fried onions / barista
- ½ tsp biryani masala powder
- 3 tbsp coriander & mint, chopped
- 2¼ cup water
Instructions
- firstly, marinate vegetables and soya chunks in curd along with spices.
- in a pressure cooker heat 2 tbsp ghee and saute spices.
- additionally add in 1 onion and saute well followed by ½ tsp ginger garlic paste.
- add the prepared marinated soya and vegetables to the cooker and level them out.
- now add 1½ cup of basmati rice (soaked for 20 minutes) and spread evenly over marinated soya.
- sprinkle ¾ tsp salt, 3 tbsp fried onions / barista, ½ tsp biryani masala powder, 3 tbsp coriander & mint and 1 tsp ghee.
- furthermore, pour 2¼ cup of water from sides.
- cover and pressure cook for 2 whistles on medium flame.
- finally, serve the soya biryani along with mirchi ka salan or raita.
how to make soya biryani with step by step photo:
- firstly, in a large bowl soak 1 cup soya chunks in hot water for 15 minutes.
- after 20 minutes, soya turns soft and squeeze off the water. keep aside.
- in a large mixing bowl prepare the marination by taking 1 cup thick curd.
- also add ¼ tsp turmeric, 1 tsp chilli powder, 1 tbsp biryani masala powder, ½ tsp ginger garlic paste and ½ tsp salt.
- whisk well to form a smooth paste.
- now add in soaked soya chunks, ½ carrot, ½ capsicum, ½ onion and 1 small potato.
- mix well and allow to marinate in refrigerator 1 hour.
- further in a pressure cooker heat 2 tbsp ghee. alternatively use oil.
- add in spices like 1 bay leaf, 1 inch cinnamon, 1 star anise, 5 cloves, 4 cardamom, ½ tsp pepper, 1 tsp cumin.
- saute till the spices turn aromatic.
- additionally add in 1 onion and saute well followed by ½ tsp ginger garlic paste.
- add the prepared marinated soya and vegetables to the cooker and level them out.
- now add 1½ cup of basmati rice (soaked for 20 minutes) and spread evenly over marinated soya.
- sprinkle ¾ tsp salt, 3 tbsp fried onions / barista, ½ tsp biryani masala powder, 3 tbsp coriander & mint and 1 tsp ghee.
- furthermore, pour 2¼ cup of water from sides without disturbing the layers.
- cover and pressure cook for 2 whistles on medium flame or if cooking in normal kadai; seal and simmer for 20 minutes on low flame.
- finally, once the pressure settles down, open the lid and serve the soya biryani along with mirchi ka salan or raita.
notes:
- firstly, along with soya chunks, you can also add veggies of your choice like gobi and beans.
- also pressure cook on medium flame else the biryani might burn from bottom.
- additionally, use basmati rice to get rich flavour and soak the rice for atleast 20 minutes.
- finally, soya biryani taste great the next day as it absorbs all the flavours.

How to ensure basmati remains long grained after cooking. M not able to figure out correct way. But the dish definitely tasted best.
soak the rice for 20 min before cooking.. this helps to get long grains..
