me and my family use to live in hubli, as of result of it we had a great influence of north karnataka cuisine. while it is popularly known as shakarpara or shankarpali , in kannada we call it as tukdi or thukdi. i really enjoy having spicy shankarpali with masala chai in the evenings after a busy day. furthermore, once you start eating shakarpara, it would be very difficult for you to resist and stop eating it.

due to its popularity, there are several variations of shankarpali dish. there is a sweet version of shankarpali and i am planning to release it soon. in addition to sweet, some even prepare salty version without any red chilli powder. while, the taste differs with each version, but the shape of diamond remains consistent. in conclusion, spicy shankarpara recipe is a total package dish which would last for atleast 10-15 days in a air tight container.

Ingredients
  • 1 cup maida / all-purpose flour / plain flour
  • 1 tbsp semolina / bombay rava / sooji
  • ¾ tsp chilli powder, add as per your spice level
  • 1 tsp cumin seeds / jeera
  • ¾ tsp sugar
  • salt to taste
  • 2 tbsp ghee / oil, hot
  • water as required, to knead dough
  • oil for deep frying
Instructions ( 1 cup =255 ml)
  1. in a large mixing bowl take 1 cup maida.
  2. to that add 1 tbsp rava, chilli powder, jeera, sugar and salt to taste.
  3. mix all the dry ingredients well.
  4. now pour hot ghee / oil over the flour. this helps to make shankarpali crispy.
  5. crumble the ghee with dough well. rub with your hands. be careful as the ghee will be very hot.
  6. now add water slowly and start to knead the dough.
  7. knead the dough 5 minutes or till form stiff and tight dough.
  8. cover with moist cloth and rest for 20-30 minutes.
  9. knead again and pinch a large ball. flatten them as you do with chapathi ball.
  10. now grease the rolling base and rolling pin, roll them into round / square shape making slightly thick than chapathi.
  11. take a knife / pizza cutter and cut them into diamond or square shapes.
  12. drop the shankarpali into hot oil.
  13. flip over so that it cooks on both sides.
  14. fry them to nice golden brown on low-medium flame.
  15. drain them on kitchen towel to remove excess oil.
  16. allow them to cool to room temperature and store them into an airtight container.

notes:

  • firstly, do not over fry as they will taste bitter. when shankarpali start to turn nice golden brown, remove them.
  • in addition, add spices of your choice. you can also use carom seeds, sesame seeds for different flavours.
  • i like to add slight sugar, salt and chilli powder. as it taste great with mixed combination of sweet and spicy.
  • furthermore, make sure to knead a tight dough else tukudi / shankarpalli will absorb oil.
  • alternatively, you can use combination of wheat and maida flour in 1:1 ratio. however, i prefer only maida shankarpali.
  • finally, pouring hot ghee / oil over the flour helps to make shakarpara crispy.
