tuppa dosatuppa dosa | dappa tuppa dosa recipe | ghee dosa recipe with step by step photo recipe. we all love dosas and dosa with generous amount of ghee makes it more tasty and flavourful. tuppa dosa is one of the signature dish of udupi-mangalore cuisine.

we prepare ghee dosa especially for kids. roasting the dosa both the sides with ghee makes dosa crispy from outside and soft from inside. i have already shared davengere benne dosa which is quite similar to tuppa dose. however we add baking soda in davengere benne dose.

serve dosas to your kids with coconut chutney, chana dal chutney or sambar’s. you can also replace ghee with butter. these dosas are poured slightly thick compared to plain dosas. however, if you are diet conscious, then skip the ghee completely to your dosa. they do taste great without ghee as well.

Ingredients
  • 1 cup urad dal / split black lentils
  • 3 cup sona masuri rice / chawal / dosa rice
  • ½ tsp mehi / menthe / fenugreek seeds
  • 1 cup paper avalakki / beaten rice / thin poha
  • oil
  • salt to taste
Instructions ( 1 cup =255 ml)
preparing batter:
  1. soak urad dal and rice, methi in a separate bowl. add in enough water and soak for 5 hours
  2. first drain the water from rice and blend to smooth batter. add water if required to make a smooth paste.
  3. transfer to a large vessel. and keep aside
  4. now blend urad dal to smooth fluffy batter.
  5. add a cup of paper avalakki to the blender. and grind to a smooth thick paste.
  6. transfer the batter into the same bowl and mix well.
  7. cover and ferment in a warm place for 12 hours.
preparing dosa:
  1. the next day you can see the batter has raised well indicating its well fermented.
  2. mix the batter slightly.
  3. and now add salt to the batter and mix well.
  4. heat a non-stick tava and pour a ladleful of the batter on tava.
  5. spread the batter in a circular motion forming slightly thick circle.
  6. smear a little ghee over it and along the edges. cook on a medium-high flame till the dosa turns brown in colour and crisp.
  7. cover the dosa for a minute.
  8. surface of the dosa should look completely cooked in the presence of steam.
  9. then fry the dosa on other side until it turns golden brown.
  10. serve immediately with coconut chutney and sambar.

notes:

  • use a cast iron tawa to get rich golden colour and crispy dosa.
  • alternatively, pinch of sugar helps to get rich colour.
  • be generous in adding the ghee to the dosas
