well, i have posted numerous kind of sambar recipes and in most of them, i have shown to prepare this mix in small proportion just for that recipe. but i thought of sharing a bulk recipe so that it can be used for many servings. also, i personally when the recipes or spices mix are made in bulk or large quantity, the taste and flavours are more. hence i always recommend you to make such spice mix in large quantity and use it whenever you require it. moreover, this recipe is very much inspired by my hometown udupi. especially when you compare it with mtr sambar powder, this is more bright red in colour and spicier due to more chillies used in it. due to more chillies and spice heat, it can be used as a multi-purpose spice mix masala.

furthermore, some more additional tips, suggestions and variations to the sambar masala recipe. firstly, the main ingredients for this masala is red chillies and coriander. hence both has to be fresh and of the best quality. moreover, i would heavily recommend using kashmiri chillies which are mild in spice heat and has great colour. secondly, the other trick is to use coconut oil but a minimal quantity of it. coconut oil for the extra flavour and minimum quantity for a non-sticky powder. lastly, store these in an airtight or zip lock bag for longer shelf life. also, note down the date when it was prepared as it easily lasts long for 6 months plus. i keep it in small zip-lock bags in the refrigerator and use one small pack at each time.

Ingredients
  

  • 2 tsp coconut oil
  • 1 cup (75 grams) coriander seeds
  • ¼ cup (25 grams) cumin seeds
  • 2 tbsp (20 grams) methi
  • 2 tbsp (30 grams) urad dal
  • 1 tbsp (15 grams) chana dal
  • ½ cup (10 grams) curry leaves
  • 100 gram dried red chilli
  • 1 tsp turmeric

Instructions
 

  • how to make udupi sambar pudi or sambar powder:
  • firstly, in a heavy-bottomed pan heat ½ tsp coconut oil and saute 1 cup ((75 grams)) coriander seeds.
  • saute on low flame until the coriander seeds turn aromatic.
  • transfer to a large plate and keep aside.
  • in the same pan heat ½ tsp coconut oil, add ¼ cup ((25 grams)) cumin seeds and 2 tbsp ((20 grams)) methi, 2 tbsp ((30 grams)) urad dal and 1 tbsp ((15 grams)) chana dal.
  • roast on low flame until the spices turn aromatic.
  • now add ½ cup ((10 grams)) curry leaves and roast well.
  • roast until the curry leaves turn crisp.
  • transfer to a large plate and keep aside.
  • further heat 1 tsp coconut oil and saute 100 gram dried red chilli.
  • saute until the chills puff up and turn crisp.
  • transfer to a large plate and cool completely.
  • now take all the roasted spices to the mixi, add 1 tsp turmeric.
  • grind to a fine powder.
  • finally, udupi style sambar powder or sambar pudi is ready to prepare udupi sambar.

  • firstly, use coconut oil to get the rich flavour in masala.
  • also, roast on low flame and individually to prevent spices from burning.
  • additionally, you can prepare the spice mix in large quantity and store in an airtight container for up to 6 months.
  • finally, udupi style sambar powder tastes great when prepared with good quality chillis (kashmiri red chilli for bright colour).
