many readers had requested for udupi style sambar podi recipe. so finally adding the video method and step by step photo recipe for making udupi style sambar podi at home. the recipe is from my mom and gives a really good sambar masala to prepare authentic udupi style sambar or koddel.

most of the houses in south canara region, sambar or udupi rasam powder is usually prepared in home itself. even i prefer to prepare all the masala at home instead of store bought masalas. the main reason being, the store bought contains preservatives to for longer life.

Ingredients
  • 1 cup coriander seeds
  • ¼ cup cumin seeds / jeera
  • 1 tsp fenugreek seeds / methi
  • ½ cup urad dal
  • ¼ cup chana dal
  • 15-20 red chilli ( both guntur and byadgi mixed )
  • fistful curry leaves
  • 6 tsp oil
  • pinch asafetida / hing
Instructions ( 1 cup =255 ml)
  1. in a thick bottomed kadai, add 4 tsp of oil and roast coriander till they turn fragrant. take off in a plate and keep aside.
  2. now add 2 tsp of oil and fry chana dal, urad dal, jeera on low flame. also add methi and fry till they change colour. take off in a plate and keep aside
  3. finally add 2 tsp of oil and roast red chillis and curry leaves.
  4. allow the fried spices to cool. once cooled, grind everything to a smooth powder adding little hing / asafetida.
  5. cool completely and store in air tight container.

notes:

  • to make in large quantity , increase the spices proportionately.
  • adjust the quantity of chilli based on your preference.
  • combination of byadgi chilli and guntur chilli helps in giving spiciness and also colour.
  • i love to add a spoon of sambar podi while preparing dry palya or sambar rice.

    When ever any function takes place at native place, only at dat time we get the wonderful food prepared by the maharaj (Caterers- usually by bhattre’s) I love udupi cusine,

    I hv been searching for this authentic sambar powder, which the maharaj used to prepare.

    I prepared gulla bolu koddel huli by using this sambar powder. All my family members were shocked that i prepared such a wonderful & authentic recipe.
