i have already shared the popular veg fried recipe and schezwan fried rice recipe, but burnt garlic fried rice recipe is very unique. i usually prepare this fried rice for my husband’s lunch box and he enjoys this with moong dal recipe. i know it is a strange combination but he just loves it and to be honest even i have stared to like it. according to him, he feels very dry to have by itself and for some reason he does not prefer the traditional manchurian gravies with it. in addition i even prepare the burnt garlic rice without any vegetables to it and it feels very similar to jeera rice with some garlic.

burnt garlic fried rice recipewhile there isn’t much complicated steps in this recipe, yet i would like to highlight some tips and recommendations for burnt garlic veg fried rice. firstly, i have added finely chopped the garlic in this recipe which can be replaced with garlic flakes. in other words slice the garlic thickly and roast them till golden brown and use it this recipe. secondly, always roast the garlic in low to medium flame till golden in colour. lastly, i have used left over basmati rice for this recipe. the rice should be dry without any moisture and almost cooked for fried rice recipe.

Ingredients
  • 4 tsp oil
  • 3 cloves garlic, finely chopped
  • 2 tbsp onion, finely chopped
  • 4 tbsp spring onion, chopped
  • 1 green chilli, finely chopped
  • 2 tbsp carrot, chopped
  • 2 tbsp beans, chopped
  • ½ capsicum, chopped
  • 2 tsp vinegar
  • 2 tsp soy sauce
  • 1 tsp chilli sauce
  • ½ tsp pepper, crushed
  • 2 cups cooked basmati rice
  • ¾ tsp salt
Instructions ( 1 cup =255 ml)
  1. firstly, in a large kadai heat 4 tsp oil and saute 3 cloves chopped garlic.
  2. saute on medium flame till they turn golden and slightly burnt.
  3. further add 2 tbsp onion, spring onions and green chilli. saute well.
  4. additionally add ½ capsicum, 2 tbsp carrot and 2 tbsp beans. saute for a minute.
  5. now add 2 tsp vinegar, 2 tsp soy sauce and 1 tsp chilli sauce. mix on high flame.
  6. furthermore add 2 cups cooked basmati rice or leftover rice.
  7. also add ½ tsp pepper and ¾ tsp salt.
  8. mix gently, without breaking rice grain. allow the rice to heat up completely.
  9. finally, serve burnt garlic fried rice garnished with few chopped spring onions green.

  • firstly, add vegetables of your choice like cabbage, broccoli and snow pea.
  • also adjust the spice by skipping green chilli.
  • additionally, cook the fried rice on high flame however roast the garlic on medium flame.
  • finally, burnt garlic fried rice taste great when served or packed for lunch box.

  1. I have tried this recipe yesterday and surprisingly the flavours turned out great. However, the mixture was enough for only 1 cup of rice and also I have added 2 tbsp of chilli sauce to make it taste much better.

    Also, you missed adding chilli sauce to the ingredients list but then later it makes an appearance in the instructions. Please edit that and otherwise simple and delicious dish. Thank you!
