mixed cutlet recipe and soya cutlet has always been my favourite snack recipe. i had been trying this recipe for a quite while now. however, i was never getting that authentic taste of veg cutlet recipe. luckily, my friend/relative shreeprada padithaya was there for rescue with this amazing veg cutlet recipe. actually, she got this recipe from her mother vinaya padithaya, who still lives in udupi. however, i want to thank both of them for sharing this amazing veg cutlet recipe. i could easily relate this recipe to the veg cutlet served in famous diana restaurant in udupi. i always, crave for the veg cutlet recipe of diana restaurant. thank god i have this simple and tasty recipe of veg cutlet now.

furthermore, i wanted touch base on the history of veg cutlet recipes. actually, there wasn’t any concept of veg cutlet recipe. cutlets were always prepared from minced meat. specifically, chicken and lamb meat were mashed with vegetables which are later shaped to patties. however, continuously increase in the price of meat led to invent an alternative cutlet recipe. eventually, potato was chosen and is used as substitute for meat. this has become huge hit and heavily adopted by both veg and non veg community.

Ingredients
for pressure cooking:
  • 3 medium sized potatoes, pealed and chopped
  • 1 carrot, chopped
  • 4 beans, chopped
  • ¼ beetroot, chopped
  • ¼ cup peas, frozen / fresh
  • salt to taste
  • 1 cup water
for cutlet:
  • 1 tbsp oil
  • ½ onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 tsp kashmiri chilli powder
  • ¼ tsp turmeric / haldi
  • ¾ tsp garam masala powder
  • salt as required
  • ¾ tsp fennel powder
  • ½ cup rava / semolina / sooji or bread crumbs
  • oil for deep frying
Instructions ( 1 cup =255 ml)
  1. firstly, in a pressure cooker add potatoes, carrot, beans, beetroot, peas and salt.
  2. pressure cook for 1 whistle or till all the vegetables are cooked well.
  3. furthermore, drain the water from vegetables. else it will be difficult to prepare cutlet.
  4. then, in a large kadai add oil. saute onions and garlic till they turn golden brown.
  5. furthermore, add boiled vegetables.
  6. also add kashmiri chilli powder, turmeric powder, garam masala powder, fennel powder and salt.
  7. mix well and mash all the vegetables well with a potato masher.
  8. if you are unable to make a round shape out of stuffing then add some bread crumbs.
  9. furthermore, using a heart shaped or round mould give a shape to cutlet.
  10. then, roll it over rava or bread crumbs to get crispy covering.
  11. after that, deep fry the cutlet till they turn golden brown.
  12. drain off the cutlet over absorbent paper to remove excess oil.
  13. finally, serve veg cutlet with tomato sauce and coconut chutney of your choice.

notes:

  • firstly, add vegetables of your choice to make it more nutritious.
  • furthermore, instead of deep frying you can pan fry. but it taste great when deep fried.
  • additionally, add some bread crumbs if the veg cutlet mixture is not holding shape and is sticky.
  • finally, cutlet taste great when served hot with masala chai.

  1. I tried the veg cutlet.. Didnt use breadcrumb. The mix just crumbled in hot oil. I cudnt deep fry. I did shallow fry.. But it didnt cm as i wanted. Please suggest.
