pulav recipes has always been my all time favourite dish. perhaps, my love to pulao recipes started during my college days. my mother use to prepare variety of pulav recipes for my lunch boxes. i always used to love the simple vegetable pulav recipe and coriander rice compared to the others flavoured pulav recipes. she prepares with carrot, peas, gobi and french beans. however, you can always extend with your choice of vegetables.

furthermore, the history of pulao recipe is very interesting. pulao recipes originated from ancient persia, but spread far across all over the world. also, this aromatic dish was refereed as “pilaf” in the persian community. with respect to india, pulao recipes were introduced by mughal empire and their rulers. traditionally, pulav was considered to be just meat and rice dish. however, later the recipe adapted itself with indian spices and other locally available vegetables.

Ingredients
  • 1 tbsp ghee / clarified butter
  • 10 cashews, half
  • ¾ tsp ginger-garlic paste
  • 1 cup basmati rice, soaked for 30 minutes
  • ½ cup milk
  • 2 cups water
  • salt to taste
spices:
  • 20 black pepper
  • 1 bay leaf / tej patta
  • 5 cloves
  • 2 cardamom / elachi
  • 1 inch cinnamon stick
  • 1 star anise
vegetables:
  • ½ onion, finely chopped
  • 2 green chillis, slit lengthwise
  • 1 carrot, chopped
  • 5 beans, chopped
  • ¼ cup cauliflower florets
  • ¼ cup peas, fresh / frozen
Instructions ( 1 cup =255 ml)
  1. firstly, take a cooker and melt ghee.
  2. furthermore, add all spices.
  3. also add cashews and fry on medium flame till cashews turn golden brown.
  4. now add finely chopped onions.
  5. also add a tsp of ginger-garlic paste. saute till raw aroma is gone.
  6. then add slit green chillis.
  7. additionally, add all vegetables of your choice.
  8. saute them for couple of minutes.
  9. then add basmati rice soaked in water for 30 minutes.
  10. saute them gently for a minute without breaking rice grains.
  11. then add half cup milk.
  12. also add 2 cups water.
  13. add salt as required and give a final mix.
  14. furthermore, pressure cook for 2 whistles on medium flame.
  15. allow the pressure to release by itself.
  16. finally, serve veg pulao with onion-tomato raita.

  1. firstly, take a cooker and melt ghee.

  3. also add cashews and fry on medium flame till cashews turn golden brown.

  4. now add finely chopped onions.

  6. then add slit green chillis.

  7. additionally, add all vegetables of your choice.

  8. saute them for couple of minutes.

  9. then add basmati rice soaked in water for 30 minutes.

  10. saute them gently for a minute without breaking rice grains.

  11. then add half cup milk. adding milk, gives bright white colour to pulao.

  12. also add 2 cups water. since we have used vegetables, maintain the proportion of 1:2½ else its always 1:2 ratio of rice and water.

  13. add salt as required and give a final mix.

  14. furthermore, pressure cook for 2 whistles on medium flame.

  15. allow the pressure to release by itself.

  16. finally, serve veg pulao with onion-tomato raita.

notes:

  • firstly, add vegetables of your choice like capsicum, potatoes.
  • furthermore, to make it more spicy increase the amount of green chillis.
  • additionally, add mint or coriander leaves for more flavours.
  • finally, pressure cook for just 2 whistles.

  1. I tried it as per the proportions exactly mentioned and omg, it turned out to be soooo good!!! With raitha it tasted better than the restaurant pulav and my husband just loved it. Only one small change I did was I ground all the whole spices and then sauteed them. Thank you for your wonderful website. Best Wishes!

    love your recipes, but whenever I make pulao the dish loses colour and ends up dark/blackish, i cant fig out why. I use coconut milk instead of plain milk. Any suggestions on how to retain white or yellow haldi colour please ?
