seviyan kheer is a easy indian dessert prepared during festival and auspicious occasions. in other words, vermicelli kheer is a common dessert on ganesh chaturthi, krishna janmashtami, or even on diwali. in addition, kheer is very common during navaratri and dusheera festival too. since it is very easy and instant to prepare most of them prefer to prepare this yummy vermicelli pudding recipe.

easy and tasty semiya payasam recipe | seviyan kheer recipe | vermicelli kheer recipe

Ingredients
  • 1.5 cup broken vermicelli / seviyan/ shamige
  • 500 ml milk
  • 7 tbsp sugar
  • 2 tbsp ghee / clarified butter
  • 5 cardamoms
  • 8 almonds
  • 8 cashews
  • 2 tbsp raisins
  • any dry fruit of your choice
Instructions ( 1 cup =255 ml)
  1. first of all, heat ghee in a pan.
  2. add the vermicelli and fry till they become golden brown.
  3. take it out in a plate and keep it aside.
  4. pour the milk in the same kadai, add cardamom and let it come to a boil.
  5. add sugar and mix well.
  6. now add vermicelli to the boiling milk.
  7. lower the flame and let the milk simmer for 5-7 minutes till the seviyan gets cooked. as a result, seviyan, absorbs the milk and becomes thick.
  8. finally, add chopped almonds, cashews, raisins or any dry fruits.
  9. serve the seviyan kheer hot, warm or cold. if serving cold, then refrigerate the seviyan kheer and then serve later.

notes:

  • firstly, you can use roasted vermicelli. as a result, you don’t have to roast it separately.
  • in addition, you can prepare vermicelli kheer with condensed milk too. therefore, you can totally skip sugar.
  • furthermore, add dry fruits of your choice, including dates and figs.
  • finally, use full cream milk to get creamy and thick kheer.
