firstly, in a large kadai heat ¼ cup ghee and roast 1 cup besan, 2 tbsp rava on low flame.
stir continuously till the besan combines well without any lumps.
keep frying on low flame till the mixture turns paste and slowly turn aromatic.
after 20-25 minutes, the mixture turns golden brown indicating the besan has cooked completely. keep aside.
now in another pan / saucepan take ½ cup sugar and ¼ cup water.
dissolve sugar completely and boil for 8 minutes.
check for 1 string consistency of sugar syrup, else boil further. be careful as the sugar syrup will be very hot.
now transfer the prepared sugar syrup over besan mixture. (keeping the flame off)
stir well making sure the sugar syrup mixed uniformly and thickens.
also add ¼ tsp cardamom powder and mix well.
transfer the prepared dough into greased plate lined with baking paper. alternatively, prepare balls to prepare besan ladoo.
set well forming a block.
now top with few chopped cashew and press slightly.
allow to set for 30 minute, or till it sets completely.
now unmould and cut into square pieces.
finally, serve besan burfi or store in airtight container.
