Ingredients

for masala:

  • ½-¾ cup coconut fresh / desiccated
  • 15 cashews
  • 1 garlic clove
  • 1 inch ginger
  • 3 green chilli
  • fistful coriander leaves
  • ½ tsp fennel seeds / saunf
  • 1 tsp coriander seeds
  • 2 tsp poppy seeds / gasgase
  • ½ cup water to blend

vegetables:

  • ½ onion finely chopped
  • 1 to mato finely chopped
  • 1 carrot cubed
  • 4 beans chopped
  • ¼ cup peas fresh / frozen
  • 10 cauliflower / gobi florets
  • 1 potato chopped

other ingredients:

  • 2 tsp oil
  • 1 inch cinnamon stick
  • 3 cloves
  • ½ tsp pepper
  • pinch turmeric powder
  • ¾ tsp kashmiri chilli powder
  • salt to taste
  • 1 cup water
  • few coriander leaves to garnish

Instructions

masala paste recipe:

  • firstly, take all blending ingredients.
  • blend to smooth paste adding hot water as required.

veg kurma recipe:

  • firstly, take a large kadai along with 2 tsp of oil.
  • further add cinnamon stick, cloves and pepper. saute till they turn aromatic.
  • now add onions and saute till the onions turn slightly golden brown.
  • furthermore, add tomatoes and saute till the tomatoes turn soft.
  • time to add vegetables of your choice.
  • also add salt, turmeric powder and chilli powder.
  • saute for a minute.
  • further add a cup of water and cook covered for 15 minutes.
  • now add prepared masala paste earlier and mix well.
  • adjust the consistency by adding water as required.
  • further, simmer for 10 minutes till the raw smell of coconut disappears.
  • finally, garnish with chopped coriander leaves.
