Ingredients

  • 3 large green chillis
  • ½ cup chana dal flour / gram flour
  • 1 tsp corn flour / rice flour optional
  • ½ tsp kashmiri red chilli powder
  • ¼ tsp turmeric powder
  • pinch of baking soda
  • salt to taste
  • water as required to prepare batter
  • ¼ tsp ajwain / carom seeds
  • oil for deep frying

Instructions

  • firstly, slit the chilli, de-seed and wash out the seeds in the running water.
  • furthermore, in a large mixing bowl, add gram flour and corn flour. you can replace corn flour with rice flour to give extra crispiness.
  • additionally, add chilli powder, turmeric powder, salt and baking soda
  • give a good mix and water little by little to prepare batter.
  • prepare a thick flowing consistency batter.
  • furthermore, sprinkle little ajwain over the batter.
  • once the oil is heated, reduce the flame to medium. and dip the deseeded chillis in the prepared batter making sure to coat well.
  • add drop the chilli gently into the oil. fry both sides until golden brown.
  • remove from oil and drain on a paper towel to absorb excess oil.
  • finally, enjoy hot mirchi bajji with masala tea.
