firstly, slit the chilli, de-seed and wash out the seeds in the running water.
furthermore, in a large mixing bowl, add gram flour and corn flour. you can replace corn flour with rice flour to give extra crispiness.
additionally, add chilli powder, turmeric powder, salt and baking soda
give a good mix and water little by little to prepare batter.
prepare a thick flowing consistency batter.
furthermore, sprinkle little ajwain over the batter.
once the oil is heated, reduce the flame to medium. and dip the deseeded chillis in the prepared batter making sure to coat well.
add drop the chilli gently into the oil. fry both sides until golden brown.
remove from oil and drain on a paper towel to absorb excess oil.
finally, enjoy hot mirchi bajji with masala tea.
