Ingredients

  • 1 cup maida / all-purpose flour / plain flour
  • 1 tbsp semolina / bombay rava / sooji
  • ¾ tsp chilli powder add as per your spice level
  • 1 tsp cumin seeds / jeera
  • ¾ tsp sugar
  • salt to taste
  • 2 tbsp ghee / oil hot
  • water as required to knead dough
  • oil for deep frying

Instructions

  • in a large mixing bowl take 1 cup maida.
  • to that add 1 tbsp rava, chilli powder, jeera, sugar and salt to taste.
  • mix all the dry ingredients well.
  • now pour hot ghee / oil over the flour. this helps to make shankarpali crispy.
  • crumble the ghee with dough well. rub with your hands. be careful as the ghee will be very hot.
  • now add water slowly and start to knead the dough.
  • knead the dough 5 minutes or till form stiff and tight dough.
  • cover with moist cloth and rest for 20-30 minutes.
  • knead again and pinch a large ball. flatten them as you do with chapathi ball.
  • now grease the rolling base and rolling pin, roll them into round / square shape making slightly thick than chapathi.
  • take a knife / pizza cutter and cut them into diamond or square shapes.
  • drop the shankarpali into hot oil.
  • flip over so that it cooks on both sides.
  • fry them to nice golden brown on low-medium flame.
  • drain them on kitchen towel to remove excess oil.
  • allow them to cool to room temperature and store them into an airtight container.
