Ingredients

  • 4 slices of whole wheat bread / white bread
  • 8 medium sized tomatoes thinly sliced
  • 2 onions thinly sliced
  • 2 tsp green chutney
  • 2 tsp tomato ketchup
  • 1 tsp butter optional
  • 8 carrot thinly sliced into rings
  • 1 tsp pepper powder
  • 2 cheese slice optional
  • 3 tbsp leftover paneer burji / sliced paneer cottage cheese
  • salt to taste

Instructions

  • to prepare the paneer burji filling, check out my recipe of paneer burji gravy here.
  • to assemble the sandwich, place a slice of bread on a flat surface, and spread green chutney and butter evenly on bread slice.
  • spoon a small amount of paneer burji gravy filling on top of the slice and spread it evenly on the bread slice. you can alternatively use paneer slices.
  • place the cheese slice over the bread.
  • arrange 4 tomato slices and onion rings over the potato filling.
  • later over this layer arrange sliced carrots and onion.
  • sprinkle a pinch of pepper powder and salt evenly on sandwich. also squeeze some tomato ketchup over it.
  • over the filling with the another slice of bread. gently press the sandwich down with your palm.
  • place the sandwich in the preheated grill pan or tava.
  • close the grill pan and allow to lightly browned from both the sides.
  • serve the grilled spicy cheese paneer sandwich for breakfast along with a hot cup of chai.
