corn curry recipe | sweet corn sabzi | sweet corn gravy | corn recipes with detailed photo and video recipe. this is a simple indian curry recipe prepared with sweet corn kernels in spicy and creamy tomato and onion based sauce. the taste of the sweet corn curry recipe is on a mild sweet in taste and is ideal for less spice eaters. it tastes great when served with tandoori roti, or chapati but can also be served with jeera rice too.
the recipe for sweet corn gravy is versatile and it can be easily mix and matched by adding the other veggies into it. but the most popular corn recipe is palak corn recipe and baby corn masala recipe. i have not posted it yet but i will soon post it with sweet corn and baby corn respectively. the main reason i chose the corn curry recipe prior to the other 2 is because i personally like sweet and spicy taste of this recipe. the other popular variation which i frequently try is corn capsicum masala and sweet corn aloo curry. adding and experimenting with capsicum is an easy option as compared to the later one. but perhaps can add more sweet to the curry and hence may not be preferred by everyone.
some more variations and tips to prepare the spicy and creamy corn curry recipe or sweet corn sabzi. firstly, i have saute tomatoes well and then mashed to smooth paste. alternatively, you can use tomato puree for more gravy consistency. also add vegetables like capsicum and peas for variation. lastly, adding cream is optional, however it enhances the flavour of corn sabzi recipe.

Ingredients
- 1 bay leaf / tej patta
- 1 tsp cumin seeds / jeera
- 2 tbsp oil
- 1 onion (finely chopped)
- 1 tsp ginger garlic paste
- 3 to mato (finely chopped)
- 1 tsp kashmiri red chilli powder / lal mirch powder
- ½ tsp turmeric / haldi
- 1 tsp coriander powder
- 1 tsp salt
- ¼ cup cashew paste / kaju paste (prepared by soaking & blending 5 cashew in ¼ cup of warm milk)
- 1 cup sweet corn (boiled)
- 1 cup water
- 2 tbsp cream (optional)
- ¼ tsp garam masala
- 1 tsp kasuri methi / dry fenugreek leaves (crushed)
- 2 tbsp coriander (finely chopped)
Instructions
- firstly, heat 2 tbsp oil and saute 1 bay leaf and 1 tsp cumin seeds till they turn aromatic.
- now add 1 onion and 1 tsp ginger garlic paste and saute till the raw smell goes away.
- additionally add 3 tomato and saute till they turn soft and mushy.
- furthermore add spices and salt.
- saute on low flame till the spices gets cooked completely.
- now add ¼ cup cashew paste and stir well.
- further add 1 cup boiled sweet corn and 1 cup water.
- stir and simmer for 10 minutes.
- now add 2 tbsp cream, ¼ tsp garam masala, 1 tsp kasuri methi and 2 tbsp coriander. mix well.
- finally, serve corn curry recipe / sweet corn sabzi with roti, naan, kulcha or chapathi.
how to make sweet corn gravy recipe with step by step photo:
- firstly, in a large kadai heat 2 tbsp oil and saute 1 bay leaf and 1 tsp cumin seeds till they turn aromatic.
- now add 1 onion and saute well.
- further add 1 tsp ginger garlic paste and saute till the raw smell goes away.
- additionally add 3 tomato and saute for 5 minutes. alternatively, use tomato puree.
- once the tomatoes turn soft and mushy, mash with the help of potato masher.
- furthermore add, 1 tsp chilli powder, ½ tsp turmeric, 1 tsp coriander powder and 1 tsp salt.
- saute on low flame till the spices gets cooked completely.
- now add ¼ cup cashew paste and stir well. to prepare cashew paste, soak 5 cashews in in ¼ cup of warm milk for 30 minutes and blend smooth.
- further add 1 cup boiled sweet corn and 1 cup water.
- stir and mix well adjusting consistency as required.
- cover and simmer for 10 minutes or till corn and masala are cooked completely.
- now add 2 tbsp cream, ¼ tsp garam masala, 1 tsp kasuri methi and 2 tbsp coriander. mix well.
- finally, serve corn curry recipe / sweet corn sabzi with roti, naan, kulcha or chapathi.
notes:
- firstly, cook the tomatoes well, else the gravy doesn’t taste good.
- also adding cream and cashew paste makes restaurant style corn masala.
- additionally, along with corn, you can also add capsicum or peas to make it more attractive.
- finally, corn curry recipe / sweet corn sabzi taste great when served creamy.
