SOAK - 4 HOURS

firstly, in a large bowl soak 1 cup rice, 2 tbsp urad dal, ½ tsp methi and 7 dried red chilli for 4 hours

TRNASFER

drain off the water and transfer to the mixi

COCONUT - HALF, CUP

add ½ cup coconut, 2 tbsp coriander seeds and 1 tbsp cumin

JAGGERY - 1/4 CUP

also, add ¼ cup jaggery, small ball sized tamarind, ½ tsp turmeric and 1 tsp salt

BLEND SMOOTH PASTE

blend to smooth paste adding water as required

DOSA BATTER - READY

transfer the batter into a large bowl. this batter is called as uppu puli dose batter or uppu huli dosa batter

PEEL SKIN

now take 1 large ridge gourd and peel the skin of it

RIDGE GOURD - SLICED

1. slice the ridge gourd to medium thickness. you can keep it slightly thin if you wish

PLACE ON HOT TAWA

now dip the heerekai slice into batter and place on tawa.

PLACE ON HOT TAWA

start placing the slices forming a circle dosa

OIL - 1 TSP

add 1 tsp oil and cover the dosa and cook on a medium flame for 2 minutes

FLIP OVER

once the dosa is cooked from the bottom, flip over and roast

RIDGE GOURD DOSA

roast both the sides until the dosa is cooked completely

READY TO EAT

finally, enjoy heerekai dosa with coconut oil or butter
