instant set dosa recipe | instant sponge dosa | set dosa & veg kurma combo with detailed photo and video recipe. basically an instant and quick version of a popular set dosa recipe made with sooji, poha & yoghurt. it is typically served with a spicy chutney or curry which is also known as mix veg kurma or sagu. it can be prepared within minutes and do not require any planning, soaking, grinding and fermentation and thus making an ideal morning breakfast recipe.

instant set dosa recipe | instant sponge dosa | set dosa & veg kurma combo with step by step photo and video recipe. dosa or idli recipes are one of the popular choices for most of us. it is generally prepared with a combination of rice and urad dal mixture which is typically soaked, grounded and fermented for about 8 hours. this generally requires some planning and hence may not be an ideal option for some and hence recipes like instant set dosa is an ideal alternative.

i have posted quite a few instant and soft dosa recipes till now and i have always received warm responses to them. hence, i make sure to post a minimum of 1 or 2 dosa recipe variants in a month. continuing the tradition, today i am posting yet another instant soft sponge dosa or also known as the instant sponge dosa recipe. it is basically termed as set dosa because it is served in a set of 3-4 dosa’s, but the combination of spicy curry makes it unique. particularly, in bangalore fast food restaurants it is served with spicy mix veg kurma which makes it a mouth-watering breakfast combo. there would be an additional spicy coconut chutney alongside the kurma, but i have not shown it in this post. you may check my blog for different types of chutneys.

furthermore, some more additional tips, suggestions and variants to the instant sponge dosa recipe. firstly, i have used coarse or bombay rava for this recipe and it makes it an ideal choice for such kinds of dosa recipes. you may choose, fine rava but do not recommend using bansi rava for this recipe. secondly, i have specifically added eno fruit salt for this recipe which gives perfect fermented texture. you may also use baking soda but may feel full after eating 1 or 2 dosa. lastly, as an alternative to the yeast, you may also use yeast which is a popular choice in kerala appam. i personally do not like the raw yeast smell and hence i have avoided it.

Ingredients
  

for instant set dosa:

  • 1 cup rava / semolina / suji, coarse
  • 1 cup poha / avalakki, thin
  • 1 cup curd
  • ½ tsp salt
  • 1 cup water
  • ½ tsp eno fruit salt

for veg kurma masala paste:

  • 1 cup coriander
  • 8 cashew
  • ½ cup coconut, grated
  • 1 inch cinnamon
  • 3 pods cardamom
  • ½ tsp pepper
  • ½ tsp cloves
  • 1 tsp fennel / saunf
  • 2 chilli
  • ½ cup water

for kurma:

  • 2 tbsp oil
  • 1 tsp mustard
  • few curry leaves
  • 1 onion, finely chopped
  • 1 tsp ginger paste
  • 1 potato, cubed
  • ½ carrot, chopped
  • 2 tbsp peas
  • ½ capsicum, chopped
  • 5 beans, chopped
  • 1 tsp salt
  • 3 cup water
  • ½ lemon juice

Instructions
 

how to make instant set dose:

  • firstly, in a large bowl take 1 cup rava, 1 cup poha, 1 cup curd and ½ tsp salt.
  • mix well making sure everything is well combined.
  • cover and rest for 30 minutes, or until rava is soaked well.
  • transfer the mixture to the mixer jar, add 1 cup water.
  • blend to smooth paste adding water if required.
  • add ½ tsp eno fruit salt and 2 tbsp water.
  • mix gently forming a frothy batter.
  • pour the batter over the hot tawa.
  • cook until the top of the dosa is cooked completely.
  • finally, enjoy instant set dosa with veg kurma.

how to make veg kurma:

  • firstly, in a mixer jar take 1 cup coriander, 8 cashew, ½ cup coconut, 1 inch cinnamon, 3 pods cardamom, ½ tsp pepper, ½ tsp cloves, 1 tsp fennel and 2 chilli.
  • add ½ cup water and blend to a smooth paste. keep aside.
  • in a large kadai, heat 2 tbsp oil. splutter 1 tsp mustard and few curry leaves.
  • add 1 onion, 1 tsp ginger paste and saute slightly.
  • also add 1 potato, ½ carrot, 2 tbsp peas, ½ capsicum, 5 beans and 1 tsp salt.
  • saute until the vegetables are cooked slightly.
  • further, add the prepared masala paste and saute slightly.
  • pour 3 cup water and mix well adjusting the consistency as required.
  • cover and cook for 8 minutes or until the flavours are absorbed well.
  • finally, add ½ lemon juice and enjoy veg kurma with instant set dosa.

  • firstly, make sure to use curd or lemon juice to sourness the batter else the dosa will not taste good.
  • also, add the eno just before preparing the dosa. eno can be replaced with baking soda.
  • additionally, you can add vegetables of your choice to the kurma.
  • finally, veg kurma with instant set dosa tastes great when served hot.
