firstly, in a large kadai heat 2 tbsp oil and roast 2 tbsp peanut.
also, roast 2 tbsp cashew until it turns golden brown and crunchy.
keep the fried peanuts and cashews aside.
in the same oil add 1 tsp mustard, 1 tsp urad dal, 1 tsp chana dal, 1 dried red chilli.
also add 1 inch ginger, 2 chilli, pinch hing and few curry leaves.
splutter the tempering on medium flame.
add in ¼ tsp turmeric and saute slightly.
further, add 2 cup cooked rice and ½ tsp salt.
mix well making sure everything is well combined.
also, add 2 tbsp coriander and 2 tbsp lemon juice. mix well.
finally, enjoy lemon rice with papad or pack for lunch box.
