firstly, in a large bowl take 1½ cup peanuts and soak in enough water for 2 hours. you can skip soaking step if you are using fresh peanuts.
drain off the water and transfer to the pressure cooker.
add ¾ cup water and ¾ tsp salt.
pressure cook for 3 whistles or until the peanuts are softened.
drain off the water and keep aside.
in a large kadai heat 3 tsp oil and splutter 1 tsp mustard, 1 tsp urad dal, pinch hing, 2 dried red chilli and few curry leaves.
add 1 inch ginger and saute slightly.
further, add in boiled peanuts and ¼ tsp salt. saute for a minute.
now add 3 tbsp coconut and mix well until flavours are absorbed.
finally, enjoy peanut sundal immediately or serve for prasadam.
