Ingredients

for pressure cooking:

  • cup peanuts
  • water for soaking
  • ¾ cup water for pressure cooking
  • ¾ tsp salt

for sundal:

  • 3 tsp oil
  • 1 tsp mustard
  • 1 tsp urad dal
  • pinch hing / asafoetida
  • 2 dried red chilli broken
  • few curry leaves
  • 1 inch ginger finely chopped
  • ¼ tsp salt
  • 3 tbsp coconut grated

Instructions

  • firstly, in a large bowl take 1½ cup peanuts and soak in enough water for 2 hours. you can skip soaking step if you are using fresh peanuts.
  • drain off the water and transfer to the pressure cooker.
  • add ¾ cup water and ¾ tsp salt.
  • pressure cook for 3 whistles or until the peanuts are softened.
  • drain off the water and keep aside.
  • in a large kadai heat 3 tsp oil and splutter 1 tsp mustard, 1 tsp urad dal, pinch hing, 2 dried red chilli and few curry leaves.
  • add 1 inch ginger and saute slightly.
  • further, add in boiled peanuts and ¼ tsp salt. saute for a minute.
  • now add 3 tbsp coconut and mix well until flavours are absorbed.
  • finally, enjoy peanut sundal immediately or serve for prasadam.
