firstly, in a large bowl take 3 potato, ½ tsp mixed herbs, ½ tsp chilli flakes and ½ tsp salt.
also, add 2 tbsp cornflour and mix well forming a dough. corn flour helps to absorb moisture.
form a soft dough adding more cornflour if required.
now grease hand with oil and pinch a ball sized mixture.
flatten slightly and stuff in 2 tbsp prepared pizza stuffing.
seal tight forming a round ball.
now flatten slightly, to shape into a cutlet. you can shape the cutlet to your choice. keep aside.
to prepare the slurry, in a small bowl take 2 tbsp corn flour, 2 tbsp maida, ¼ tsp pepper powder, ¼ tsp salt.
form a smooth lump free batter adding ½ cup water.
now dip the prepared cutlet into cornflour slurry.
add coat with breadcrumbs. you can fry immediately, or freeze and prepare it up to a month.
shallow fry in hot oil. you can alternatively, pan fry or deep fry.
flip over and fry both sides until it turns golden brown.
finally, enjoy pizza cutlet with tomato sauce.
