firstly, in a large bowl take 1 cup besan and ¼ cup rice flour.
add ¼ tsp turmeric, ½ tsp chilli powder, 2 tsp sesame, ¼ tsp ajwain and 1 tsp cumin.
also add 1 tsp ginger garlic paste, 1 chilli, finely chopped, ½ tsp salt and 2 tsp oil.
mix well making sure all the spices are well combined.
now add ½ cup water and prepare the batter.
adding water as required make a smooth thick paste. keep aside.
take big sized palak leaves and spread besan batter.
repeat the leaves and besan batter forming atleast 3 layers.
now roll tight making sure all the layers are intact.
further, spread a little besan batter over the roll.
place in steamer and steam for 15 minutes on medium flame.
cool down the rolls. you can serve the palak vadi without frying. however, tastes great when fried.
now heat 2 tbsp oil on the pan and place the steamed palak rolls.
roast on medium flame turning all the sides.
flip over and fry until the rolls turn golden and crisp.
now sprinkle 1 tsp sesame seeds and is ready to serve.
finally, enjoy palak vadi or crispy palak rolls topped with coconut.
