Ingredients

  • 1 cup besan / gram flour
  • ¼ cup rice flour
  • ¼ tsp turmeric
  • ½ tsp chilli powder
  • 2 tsp sesame
  • ¼ tsp ajwain / carom seeds
  • 1 tsp cumin
  • 1 tsp ginger garlic paste
  • 1 chilli finely chopped
  • ½ tsp salt
  • 2 tsp oil
  • water for batter
  • 1 bunch palak / spinach
  • oil for frying

Instructions

  • firstly, in a large bowl take 1 cup besan and ¼ cup rice flour.
  • add ¼ tsp turmeric, ½ tsp chilli powder, 2 tsp sesame, ¼ tsp ajwain and 1 tsp cumin.
  • also add 1 tsp ginger garlic paste, 1 chilli, finely chopped, ½ tsp salt and 2 tsp oil.
  • mix well making sure all the spices are well combined.
  • now add ½ cup water and prepare the batter.
  • adding water as required make a smooth thick paste. keep aside.
  • take big sized palak leaves and spread besan batter.
  • repeat the leaves and besan batter forming atleast 3 layers.
  • now roll tight making sure all the layers are intact.
  • further, spread a little besan batter over the roll.
  • place in steamer and steam for 15 minutes on medium flame.
  • cool down the rolls. you can serve the palak vadi without frying. however, tastes great when fried.
  • now heat 2 tbsp oil on the pan and place the steamed palak rolls.
  • roast on medium flame turning all the sides.
  • flip over and fry until the rolls turn golden and crisp.
  • now sprinkle 1 tsp sesame seeds and is ready to serve.
  • finally, enjoy palak vadi or crispy palak rolls topped with coconut.
