Ingredients

for aloo stuffing:

  • 2 tsp oil
  • 1 tsp mustard
  • ½ tsp cumin
  • pinch hing
  • 1 chilli finely chopped
  • 1 onion finely chopped
  • ½ tsp ginger paste
  • ½ tsp turmeric
  • ½ tsp salt
  • 1 carrot finely chopped
  • 2 tbsp sweet corn
  • 3 tbsp peas
  • ½ capsicum finely chopped
  • 3 potato boiled & mashed
  • 2 tbsp coriander finely chopped
  • ½ lemon juice

for instant bun dosa batter:

  • 1 cup rava / semolina / suji coarse
  • 1 cup poha / avalakki thin
  • 2 tbsp rice flour
  • ½ tsp salt
  • ½ cup curd
  • water for batter
  • ¼ tsp baking soda

Instructions

aloo stuffing preparation:

  • firstly, in a large kadai heat 2 tsp oil. add 1 tsp mustard, ½ tsp cumin, pinch hing and 1 chilli. splutter the tempering.
  • now add 1 onion and saute until the onion shrink slightly.
  • further, add ½ tsp turmeric and ½ tsp salt. saute until the spices turn aromatic.
  • add 1 carrot, 2 tbsp sweet corn, 3 tbsp peas and saute for a minute.
  • also, add 3 potatoes and mix well combining well.
  • now add 2 tbsp coriander and ½ lemon juice. mix well.
  • finally, aloo stuffing is ready. keep aside.

instant bun dosa batter:

  • firstly, in a mixi jar take 1 cup rava and 1 cup poha.
  • blend to a fine powder without adding water.
  • transfer the rava and suji powder into a large bowl. add 2 tbsp rice flour, ½ tsp salt and mix well.
  • also, add ½ cup curd and water. mix well forming a smooth batter.
  • rest the batter for 15 minutes or until the batter is well soaked.
  • now add ¼ tsp baking soda and mix gently.
  • take a small pan and grease well with oil.
  • pour the batter over the pan.
  • place the aloo stuffing in the centre and press gently.
  • now pour the dosa batter and cover the aloo masala.
  • cover the pan and simmer for 2 minutes or until the base is cooked.
  • flip over and cook both sides.
  • finally, enjoy aloo stuffed dosa with green chutney.
